Pub night has been postponed until next Friday so we're now having a roast aubergine and orzo bake tonight. Then the plan is:

Tomorrow: sweet and sour chicken rice bowl
Sunday: Sausage and mash with carrots, peas and onion gravy
Monday: Chicken fajitas
Tuesday: Minestrone
Wednesday: Stir-fried cabbage and noodles
Thurs: Quick spag bol.

Saturday - Chicken Dopiaza with rice
Sunday - Cottage pie but made with shin of beef rather than mince, peas and broccoli.
Monday - Chinese tomato egg stir fry with rice
Tuesday - Hungarian mushroom soup
Wednesday - Slow cooker spicy pork ramen
Thursday - Spicy tuna roll bowls.

This week will be an easy one - busy at work, DD has been ill for weeks on and off, so foid is fuel rather than fun at the moment.

  • tofu fried rice
  • ramen with other half of the tofu
  • paneer curry
  • jacket potato, beans and cheese for DD, egg mayo for me
  • Porcini pasta bake
  • flatbread with roasted ras-el-hanout veg and halloumi.

Monday: tempeh, lentil and walnut chilli with rice
Tuesday: something with the rest of the salmon (maybe a curry?)

Friday: marry me chickpeas
Saturday: Burns (I know it’s a day early but this way everyone can drink lots of whisky and sleep off the hangover!): Scottish mussels, haggis, rumbledethumps, cranachan

I ended up doing duck confit and potato croquettes last night - just thrown in the oven after a looong hard week.

This week will also be fairly intense so I am again mainly working out of the freezer - I also have a lasagna in there, and pizza bases in the fridge but no mozarella.

Today: Lamb koftas, flatbreads, salads
Tomorrow: chicken gyros, flatbreads, Salads
Mon: mushroom risotto
Tues: sweet’n’sour prawns
Wed: salmon, steamed potatoes, hollandaise, veg
Thurs: chicken vadagam curry
Fri: steak
Sat: HM chicken burger and salad
Sun: HM chicken burger and salad

Sun: slow cooked ox cheek stew and mash
Mon: home made soup and toasties
Tuesday we eat big lunches at work as it's the pub quiz so just have crumpets or something.
Weds: tomato and bean stew with halloumi and garlic bread
Thurs: he's not decided yet ... I'm doing the rest.

Tonight: steaks, roast potatoes in goose fat left over from Christmas, greens from farmers' market
Monday: Mediterranean trout recipe-couldn't eat the fish in time last week so slung in freezer
Tuesday: chicken tacos with padrons and cabbage slaw
Wednesday: pasta with purple sprouting broccoli and pancetta
Thursday: red lentil and sweet potato dahl and okra
Friday: soup made from whatever veggies didn't get used up this week
Saturday: out (hoping oysters feature)

Does anyone have any recommendations for amazing salsa? I vary between buying the Luchito ones, but they are a bit samey, and making mango salsa or RecipeTinEats restaurant-style salsa - which is easy but sometimes I just want to open a jar!

Pico de gallo (sp?) is delicious and very easy to make. I tend to do that or a mango one - or you can use pineapple instead of mango.

I appear to be back to 4-5 day meal planning and shopping. I just can't get my head around the longer term. Also, the gluttons in this house mean if I buy more of stuff to last a week.... it all just gets eaten in 4-5 days anyway. A source of endless frustration for me. So.... shopping came yesterday and we had sausage pasta last night

Cod fillets with new potatoes and random veggies in the fridge
Creamy beans on gnocchi (bit worried it will be a bit heavy - hoping for the best....)
Chicken burrito bowls
"home made" (using a ciabatta mix) no-tomato pizza with taleggio, ricotta, garlicy greens and salami [for the veggies - this recipe doesn't actually call fort he salami originally and is delicious without it - but we're a "pizza isn't pizza without some kind of UPF pork product added" family! Grin ]

Tonight: southern fried chicken portions, beer battered chips and steamed mixed veg
Tomorrow: air fried lemon and dill salmon, butter and parsley steamed baby new potatoes and tenderstem broccoli
Wednesday: Haggis, mashed potatoes, mashed carrot and swede and gravy
Thursday: Chicken and vegetable soup and crusty bread
Friday: not sure yet. Have chicken breasts, bacon and sausages so something with one of those!
Saturday: cottage pie with veg
Sunday: Roast dinner

Note this is very meat heavy so going to try and incorporate more veggie things next week!

So far, I had my sat/sun/mon plans on different weekend days, had wed on Tues, and made a massive mac’n’cheese with bacon and veg last night (so put 3 pasta bakes in freezer as well).

Tonight, I have Greek lemon and herb chicken with med veggies (and maybe just crusty french stick instead of potatoes).

Tomorrow I am going to a concert an hour away so will eat on the road.
But I may still do the steak, only on Saturday night.

Everything done on schedule by me so far, DP's choice for tonight is rabbit tagliatelle, as we had two boxes of pre cooked rabbit in the freezer from when we bought it and cooked the whole thing so it won't take long to knock up a creamy mustard sauce and put some tag on. Possibly buttered leeks with it.

Friday - Greek chicken bowls
Saturday - Overnight at friends for a pizza party, I'm taking along a variety of wings, dips and crudites.
Sunday- The plan is chicken Balmoral with peppercorn sauce, potatoes and veg but I highly suspect a hungover Chinese will be ordered 😅.
Monday - Roasted pepper and tomato soup (I may add some lentils too for extra protein/fiber) with a cheesey garlic toastie.
Tuesday- Recipe tin eats Firecracker beef (with noodles rather than the recommended rice)
Wednesday - Avgolemono
Thursday - Gammon steak, egg/pineapple, chips and peas.

Not as much veg as I'd like so lunches will be a couple of different vegetable soups which I've yet to decide.
