Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

Just had to get ChatGBT to help with meal planning as I'm so bored.

Tonight: pork mince and cabbage on mash
tomorrow: Salmon fillets with a lemon risotto
Sun: 1 pan beef strogonoff
Mon: Pork tacos with pineapple and avocado salsa
Tues: Vaguelly korean style chicken thighs cooked in slow cooker with rice and greens

No veggie meals so that will have to be next week.

DP remains in charge here.
Saturday = hoummus, cous cous, picky stuff
Sunday = ploughman’s and soup
Monday = fishcakes for him and veggie burgers for me with new potatoes and salad
Tuesday = black bean soup
Weds = pasta puttanesca
Thursday = DP’s birthday and he wants a takeaway
Friday will probably be something like egg and chips

I’m so bored of doing the kids teas, they’re now on a separate (boring) meal plan because they won’t eat anything interesting, different or remotely spiced! Will still attempt to brighten the palate of smallest ds.

Theirs now goes:
Monday - pasta
Tuesday - chicken pittas and salad
Wednesday - eggs/sausages/burger/freezer chicken with chips or baked potatoes
Thursday - pasta
Friday - pizza
Saturday - something with rice or noodles
Sunday - roast dinner

Myself and dh eat a bit later anyway so our plan

Monday - Korean chicken thighs with egg fried rice
Tuesday - Halloumi and Roasted veg traybake
Wednesday - Thai Red Chicken curry
Thursday - Spaghetti Carbonara
Friday - Pork lettuce cups and chicken skewers
Saturday - Chickpea and potato curry
Sunday - roast chicken

Only planing until Wednesday because I don’t have the compus mentis to do more than that and it’s market day on Weds where I’m in a new habit of getting the veg and fruit for the week

we have a huge amount of haggis and rumbledethumps leftover from last night - only DH eats haggis in the family so that’s his lunches sorted all week! Need to come up with some fun ideas for the rumbledethumps. Probably just add a fried egg for lunch today, thinking I could mash in some tuna and make fish cakes, then the rest as a topping for shepherds pie? Burns went down a treat - especially the new pudding, we usually make cranachan but this time I did Caledonian cream and it was delicious

Sunday: marry me chickpeas
Monday: spaghetti bolognese (veggie and meat versions)
Tuesday: homemade chicken nuggets/tuna fish cakes, probably with something easy like peas and chips
Wednesday: DS and I will have veggie haggis shepherds pie, DH and DD are out

January has been a “use up freezer and cupboards” month, supplemented by a good few treats (including some good meat) I brought back from Christmas at home. I did one big shop when I arrived back for fresh things. But the lifts in my building are not working again so I would have to drag my groceries up 4 floors before I get the lift the other 10. So I am not going properly shopping this weekend again, just 1 bag of milk and basic veggies.

Last night, I had roast lamb with roasted root veg and roast baby potatoes. (I did the rest of the whole butternut in another pan for today’s lunch soup).

Today I am making a chicken burger with feta cheese, and salad
Tomorrow is beef bourginonne and mash
Tuesday is the other half of the beef
Wednesday is cauliflower cheese
Thursday is salmon and steamed mangetout
Friday I.might do a proper steak or a chicken vadagam curry
Saturday will be a big proper food shop so probably something I buy then - maybe I’ll roast a whole chicken

I had a week off last week as I was trying very hard to stick to a calorie deficit which meant we all ate different foods but getting back on it this week. Will sit down this afternoon with a cup of tea while cooking a roast and work out the plan. So much inspiration on here, I've got loads of posts to look back on!

@TheGirlWhoLived I do a separate meal plan too - my SC are so dull with food, we'd eat nothing but plain pasta and chicken nuggets!

Just done our shop, so the week is finalised. I've been feeling a bit under the weather so not overly enthusiastic!

Today: roast beef, yorkies, roast potatoes, parsnips, beetroot, carrots, cabbage, peas. Pear and almond traybake.

Monday - Kale and smoky bacon pasta

Tuesday - Parsnip and leek curry with apple salad, new recipe that came in my Riverford newsletter

Wednesday - Almond butter noodle stir-fry from the same newsletter for me, sounds really quick so I can eat before I go out, DH will do teriyaki salmon, noodles, veg for everyone else

Thursday - make your own pizza, I fancy a spinach and ricotta calzone, also have a jar of artichokes to use up.

Friday - Garlicky white beans, leeks & cod

Today: beef shin stew and mash
Monday: filled pasta, either cheese and ham or spinach and ricotta, with bacon bits, asparagus and a garlic, lemon, butter sauce
Tuesday, out.
Wednesday: chicken alfredo, pan fried gnocchi, veg to be decided
Thursday: haggis, pork mince and black pudding burgers, the mix is already in the freezer, chips, salad
Friday: probably a stir fry of some sort.

Stuck to the weeks plan except for today as I forgot to buy mushrooms for a mushroom bourguignon. We had some vegetable pies from Aldis Xmas offerings in the freezer so had those instead.

@WhoAteMyBiscuit I don’t follow a specific recipe though there are lots online eg bbc good food.

Very easy as it’s just roasting whatever veg you want really - season and roast with the harder veggies such as sweet potato, carrots etc in first, then add peppers, aubergine, courgette, onions, along with the halloumi. In total about 30/35 mins.

If you haven’t tried halloumi before it’s delicious and you can pan fry or air fry it too.

Monday: Veggie bolognese
Tuesday: chicken nuggets/fish cakes, leeks and chips
Wednesday: trout fillets, rice and air fried broccoli and cauliflower
Thursday: marry me chickpeas (still haven’t managed to actually have this despite it keep coming up on the menu!)
Friday: DH in charge, I’m out!

My meal plan week starts on a Saturday, plan for this week:

Sat - chicken in black bean sauce with basmati rice and mini naan
Sun - steak & stout stew, air fried new potatoes, peas and carrots
Mon - jacket potato, caramelised onion sausages and baked beans
Tue - Thai green chicken curry and rice
Weds - cottage pie with peas and carrots
Thu - chilli and rice
Fri - fillet steak, mushrooms and air fried new potatoes

Okay, I am a bit behind and all over the place but roughly

Monday: Chippy tea after football, needs must!
Tuesday: Prawn stirfry (veg and singapore noodles)
Wednesday: Flatbreads, houmous, greek salad and some kind of spiced chicken
Thursday: Mediterranean veg + butter bean traybake with golden halloumi
Friday: I'm out, boys will fend for themselves
Saturday: We're out so will need to eat something small and quick - toastie probably!
Sunday: Going out for pizza

Eek, a lot of "out' this week!

Thank you for the tips! I'll give it a go this weekend. I can be a bit bad at not eating enough veg but I do like things more when they've been roasted - and served with cheese! I hadn't thought about cooking halloumi in the air fryer, either, so will give that a try at some point because I find it a bit faffy cleaning the pan.

Oh yum! This sounds right up my street - and my husband loves roasted cauliflower, so it will go down well with him, too! 😄 Bulgar wheat makes a nice change from rice but I often forget about it until I have it again and remember how much I like it. Thanks so much for sharing the link 😊

Today we had spaghettiband meatballs in tomato sauce. All made from scratch big hit with kids.
Tomorrow: homemade salmon fish fingers for kids and salmon for me. With veg and homemade chips.
Wednesday: jacket spud beans and cheese.
Thursday: beef burritos for kids. Veggie for me abd husband
Friday easy dinner probably pasta or fish fingers

Not planned weekend yet.
