Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

Want to get better at planning ahead and therefore, hopefully, eat better .

This week:

  • chicken and orzo soup with ciabatta
  • spaghetti bol
  • jacket pots with varied fillings
  • sausage tray bake

*Chow mein

Not sure about weekend.

Sorted the rest of my week now so next few meals are

Baked Camembert, roasted broccoli and Brussel sprouts, sourdough (still on a Christmas use up!)
French Onion Crispy Gnocchi Bake With Roasted Tenderstem
Chilli cheese chickpeas with candied jalapenos with jacket poatoes
Creamy leek, mushroom & butter bean pie with cabbage and other greens

ive never joined in before and in a fit of efficiency at the weekend I decided to plan for the whole of Jan. so this week -
monday - chicken, ginger and Brussels sprout stir fry with noodles
tuesday - roast cabbage, leek in cheese sauce and sausages
wednesday - packet ravioli and sauce
thursday - chicken with mustard seed and coconut milk (a Nigel slater recipe)
friday - homemade chicken kebab wraps and home,Ade coleslaw
saturday - cottage pie and veg
sunday - roast chicken, roast potatoes etc.

if I post it here I may just keep to the plan 😂

Trying to get back in the swing of things again.

This week we have had/are having

Saturday - pasta with broccoli, anchovy, chilli, garlic, olive oil
Sunday - Ottolenghi's five-a-day toad-in-the-hole, green beans
Tonight - baked cod with a chorizo crumb and lemon aïoli, mash, sautéed kale, carrots, peas
Tuesday - spicy bacon and beans, rice
Wednesday - fish fingers and chips/blue cheese and spinach pasta for me
Thursday - Chickpea dal with crispy parsnip (new recipe for me)
Friday - tuna poke bowls, maybe.

Oooh this sounds lush - especially the butter bean pie, do you have a recipe?

I hate a meal planner - I may buy for one or two days ( I have a freezer of go to ingredients for many things) but to know what I am having for dinner in a weeks time sounds like hell.

So this week for us
Pork chops, with roast veg, and mashed root veg and broccoli with an apple and cider gravy (sausage for dd)
Macaroni cheese with veg for DH and Dd chicken chow mein for me
Egg Fried mushroom and pepper rice
Fajitas
Pizza for DH and dd- garlic mushrooms on toast for me
Bacon, broccoli and gnocchi bake (bacon on the side as dd won't eat it)
A mix of meals I am dairy free and Dd doesn't like meat....

All of our meal planning is buggered, as I’ve broken my wrist on my dominant hand. DP isn’t much of a cook but can follow simple recipes and is willing to try.

Any ideas for vegetarian recipes for two that can be eaten one handed? Either very simple or assembly job stuff?

I’m happy to buy things like gyozas and quiche etc

Could he do a macaroni cheese or pasta bake with veg in? You could eat that with a spoon. If he can't make a cheese sauce, he could use a tub of philly for a pasta bake and grate some proper cheese and breadcrumbs on the top. Risotto, he could do a baked one, that's spoon friendly. At least he's willing to try!

What about a veggie casserole that can be eaten out of bowl one handed? Lots of root veg, pearl barley, stock, sit in the oven for a while.

All homemade from scratch

Wednesday - Rogan Josh kofta curry and basmati rice
Thursday - Moroccan nourish bowl
Friday - beef tacos and guacamole and salsa
Saturday - beef stifado and mash with green beans
Sunday - lasagne and salad
Monday - tex-mex meatballs and rice
Tuesday - chicken tikka masala and naan bread

Thanks. These are all good ideas but he needs a precise recipe to follow. A baked risotto is a great idea, in particular, if there’s a recipe. And he could maybe do macaroni with a bought 4 cheese sauce.

Maybe some pan fried gnocchi with something??? Or a traybake. I’ve got The Green Roasting Tin book but find it relies on tomato too much for my liking.

@RemusLupinsBiggestGroupie - had exactly the same situation 10 years ago when I broke my right wrist and non-cooking DH had to step up. I seem to remember a lot of jacket potatoes with cheese, and a lot of pasta, with occasional curries. DH is also fine when following a very straightforward, step by step, recipe but even then, I found that some kinds of dishes are more forgiving than others.

I second the green roasting tin idea - I think that would have been a lifesaver for DH and I if I'd had it then.

For New Year, I am aiming to up the veggies again as I wasn’t great towards the end of last year.

This week:
Mon: Steak (brought in my suitcase), roasted baby potatoes (with garlic, rosemary and lemon pepper seasoning) and roasted Mediterranean vegetables (from a mix I’d frozen before I left)
Tues: Greek lemon and garlic chicken thighs with more roasted veggies and steamed baby pots
Wed: salmon (I think fried), steamed baby pots, wilted spinach
Thurs: Pasta carbonara
Fri: Chicken fajitas with HM guacamole, salad etc
Sat: Lamb koftas with flatbreads, hummus and salad
Sun: depends on if I get nice fish at the market, or possibly the other steak I brought back on the plane …or I may look at the weather and just want carbs!

Shopping coming this evening (fingers crossed the predicted snow doesn't mess it up!). Cleaned fridge out last night as was feeling productive. Bit of a boring/easy week as working around a couple of birthdays:

F Chicken & stuffing meatballs, cauli cheese, cabbage, peas, roasted carrots & onion
S Birthday tea - pizza & chips
S Lasagne, salad & GB
M same
T Toasties, beans/eggs on toast
W Birthday tea - takeaway?
T Leftovers

He's making a veggie bolognaise with penne tonight.

The weekend will probably be takeaway and veggie sausage and mash.

Then it will be
jacket potatoes with salad and coleslaw
gnocchi with roasted vege and feta
bought vegetarian pies with new potatoes and vege
bombay potatoes with spinach - he's found a recipe for this that he wants to try
pizzas with our own toppings

It's way more potato and carb heavy than I'd usually choose but at least it's food and there will be vege everyday.
