Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

@RemusLupinsBiggestGroupie wat about breakfast for dinner? Eggs, toast, avocado, hash brown, beans, veggie sausage .... or whatever you have in that form?

Or veggie burgers with a salad? Pre-made ones?

Roasted mediterranean veg with hummus and flatbreads?

We dnt' seem to have completely done our meal plan from last week so I'm jiggling a few things around from then, changing etc adn this is now what we have from today:

Slow cooker honey/garlic chicken served on rice with greens.
Halloumi, chargrilled greens and hot honey on flatbreads
Slow cooker pork char suey type thing on rice with greens [there's a theme here linked to current work schedules!]
Cabbage/pancetta/pine nut pasta in bastardised version of Jamie Oliver's recipe
Cannelini bean mix with tomatoes and spinach on jacket potatoes
Aubergine and chickpea and pepper curry (but this is a "maybe" depending on what happens during the week. I might even do it as lunch and post-school snacks one day instead)

This week I made Jamie Oliver’s Red Asian Slow cooker pulled pork with rice and steamed veg (carrots, broccoli).

The recipe calls for plum jam and pomegranate both of which by chance I have some to use up!

It was really delicious and definitely going on my list!

We are currently 4 adults and I've found that we don't end up eating proper cooked meals every day, so this week I've made a big pot of vegetable soup, using up whatever was left in the fridge - carrots, leeks, onion ,celery, a pepper, courgette and squash.
That will do for lunches and snacks for a few days, with or without toast.
Then :
Chicken fajitas with a spinach salad and pitta bread, + greek yogurt
steak bites with sweet potato, peppers and tenderstem broccoli
roasted salmon with potato or sweet potato and mange tout
Maybe soup with cheese on toast
Maybe a chickpea curry
Might eat at the pub when we go for the pub quiz

Tonight: last of the freezer Christmas party food while we play D&D (if DD and DH make up from their ridiculous fight earlier)
sunday: mushroom risotto (containing DS’s risotto education)
monday: prawn and aubergine Thai red curry
Tuesday: savoy cabbage and cannellini bean pie
wednesday: fish fingers and chips, DH going out on a date night
Thursday: leftover mushrooms in wine from last week turned into a spaghetti sauce
Friday: pimp your own pasta pesto

This week we’re having:

Homemade McMuffins & hash browns
Pasta e fagioli (saw it on insta then someone on here was having it so it reminded me)
One pot sesame garlic chicken and rice
Garlic butter and Parmesan chicken, fries and tenderstem broccoli
Sausages, fried potato and onion gravy (was meant to have last week but I froze the sausages and kept forgetting to get them out)
Bacon leek and cheese pasta bake

I already changed the plans halfway through last week - so roast chicken thighs with defrosted cauliflower cheese and roasted potatoes on Thursday, meatballs in a tomato sauce with roasted veggies and pasta on Friday, my roast shoulder of lamb last night with roasted veggies potatoes and roasted carrots.

Sun: leftover roast lamb in gravy with steamed potatoes and steamed Brussels sprouts
Mon: chicken fajitas
Tues: probably ikea meatballs and oven chips
Wed: prawn stir fry
Thurs: ?? (Maybe a mushroom risotto)
Fri: chicken gyros on flatbreads
Sat: HM lamb koftas on flatbreads

I managed to get 4 lamb steaks and 1 more small roasting joint off the lamb shoulder before I cooked enough for 1 person for 2 nights - so those are frozen for later consumption. I froze the 2 steaks in their packet as I don’t know if I’ll get to cook one this week. And I diced 1 chicken breast, sliced another into strips for fajitas and put half in a freezer bag and left the 3rd from the packet whole - so they also hit the freezer when I sliced the amount I need for tomorrow - so I have everything ready for tmrw night (even the guacamole).

Sunday - Dcs - teriyaki salmon and rice
Me - Dhal and cabbage curry with naan.

Monday - Dcs- Pasta pesto with peas and cream
Me - butternut squash and pesto cream

Tuesday - Loaded potato skins with broccoli

Wednesday - Chicken noodle soup DCs
Toretllini en brodo soup me

That is as far as I have got so far.

I’m sticking with my Flavours of The World meals theme but the days change each week. I also do stuff from other countries.

This week is -

Sunday - Italy - Turkey thigh mince/pancetta bolognaise (it’s in the slow cooker as I type). Other ‘Italian pasta style dishes fall into this category).

Monday - Indian - this is always a curry of some or even something like roasted chicken legs in a tandoori rub etc. This week is a King Prawn Bhuna.

Tuesday - Greek Night - this week is Pork Souvlaki kebab skewers with Greek lemon potatoes and salad

Wednesday - UK night - this week is slow cooker beef stew with herby dumplings

Thursday - Mexican - Taco night

Friday - we always have fish, this week is Teriyaki glazed salmon, noodles and veg.

Saturday - Chinese - next Saturday is 5 Spice slow roasted pork belly.

Oh FFs my freezer appears to have broken down.

On the one hand- it's good DH is away as he has a cavalier approach to food hygiene that means he would just re-freeze everything, including fish. So i can do a mass cook / chuck as required.

On the other hand, it means that I have to rethink dinner today. DCs are agitating for pizza.

T: Lentil shepherds pie, veg
W: Salmon & veg tray bake
T: Vegetarian Mexican lasagna (using burnt aubergine chilli from the freezer and some extra veg)
F: Creamy garlic paprika prawn tagliatelle
S: I’m out, family fending for themselves
S: Leek & butter bean pie, mash & veg

We managed to stick to last week’s plan except for Thursday which became soup and sandwiches so I’m happy with that.

Saturday: Chilli cheese chickpeas with candied jalapenos (didn't make this weekend in the end)
Sunday: Out for pub Sunday roast
