Need a savory, gluten-free, vegetarian, not too oily breakfast idea

I'm in a breakfast rut, and I can't help feeling that the perfect breakfast for me is out there; I just haven't found it yet.

I don't mind cooking in the morning - I sometimes make myself a quick egg fried rice. Nothing too complicated though because I'm out to work. I do quite like eggs.

I do not eat any gluten-free fake foods like GF bread or GF bagels because they are expensive and xantham gum doesn't agree with me.

I don't like sweet things, and I don't like anything too greasy or oily.

I think maybe I'm looking for something from another country or another country's cooking. I LOVE poha for breakfast (Indian flattened rice and potato) but it's a faff to make. Maybe I need something I can make in advance?

Spanish tortilla is great with some chopped pepper, cheese and tomatoes on the side.

Jollof rice (without any meat, obvs). We make a lot of it and refrigerate it and use it up over a few days. It’s nice with an egg on top.

Shashuka: the version with tomatoey stew with some lentils, with eggs added to poach and cover till cooked. Again, you can make a ‘master pot’, refrigerate it, and cook up with an egg as needed.

Kedgeree minus fish: we use rice, chopped asparagus, some frozen peas & a herb leaf like coriander, a bit of spice, seasonings and scrambled egg.

Basic one that we like: pitta bread with a small omelette in it, add a green leaf of some sort.

Also: toasted pitta bread with sliced cheese, tomato and capsicum pepper slices, grilled briefly.

OR homemade bread with marmite? Leave it in the fridge to do it's second rising overnight and then pop in the oven in the morning. I can't think of anything nicer than fresh bread for breakfast (and homemade bread is SUPER easy to make as long as you use enough yeast). OR you could dip warm fresh bread into olive oil & balsamic. And the day after, toast it and have it with garlicky mashed pan con tomate, Spanish style.

Greek Spinakopita

All could be made in advance and heated before eating

Tofu scramble with avocado, (feta) and fresh chilli and pumpkin/sunflower seeds

In Morocco i was served soft boiled eggs with cumin which i really liked, with fresh flatbread, cucumber and tomato.

Yes! Boil potatoes until NOT mushy. Fry onions. Add crushed garlic RIGHT at the end.

Beat up your eggs and mix them with the spuds, onions and garlic. Put in an olive-oiled frying pan with a lid over it on lowish. When it's sort of set, put a plate over it to turn it over and slide the uncooked side in, face down. Cook a little longer.

Should be still damp on the inside.

Nice with aioli.

Day after, it's nice air fried to crisp up the outside a little. OR a slice cold with salad.

  • bowl of miso soup
  • main dish tofu or fish dish
  • 2 side dishes composed of vegetables - seaweed?
  • a few pickled vegetables

GLUTEN FREE, PEOPLE!! And none of your fakey gluten free stuff. Read the OP again. So no pitta, or toast, or bagels, or pancakes.

Am enjoying the suggestions on here, as I am similar.

I vary the cheese and herbs I use, and they freeze really well.

I keep seeing loads on recipes of Fabebook for grated courgettes with cottage cheese and cheese, made as patties.

Turkish eggs are really nice - warm up some yogurt with some grated garlic in, melt some butter and when it’s foaming put in some pul biber then take it off the heat once it’s fizzed. Serve the garlicky yoghurt with the spiced butter over and a poached egg. Does need a carb to scoop up the yoghurt though.

There are some good suggestions, but it's all stuff I already know about (apart from congee which I'm going to have a go at).

I still feel there's a secret breakfast somewhere out there which is perfect for me, and I just haven't found it yet.

Maybe my question should have been, 'what do other countries / other cultures eat for breakfast?'

I make a what-I-call ‘hash’ sometimes… cumin seeds, new potatoes & cabbage, maybe some other green veg, stir fried up and served with houmous and fried egg.
