Need a savory, gluten-free, vegetarian, not too oily breakfast idea

I'm in a breakfast rut, and I can't help feeling that the perfect breakfast for me is out there; I just haven't found it yet.

I don't mind cooking in the morning - I sometimes make myself a quick egg fried rice. Nothing too complicated though because I'm out to work. I do quite like eggs.

I do not eat any gluten-free fake foods like GF bread or GF bagels because they are expensive and xantham gum doesn't agree with me.

I don't like sweet things, and I don't like anything too greasy or oily.

I think maybe I'm looking for something from another country or another country's cooking. I LOVE poha for breakfast (Indian flattened rice and potato) but it's a faff to make. Maybe I need something I can make in advance?

Black bean and sweet potato, eggs and spinach breakfast burritos

Thadthimes · 18/08/2025 05:39

Gazpacho with all the added chopped cucumber, pepper and tomato? Serve chilled of course.

JurassicPark4Eva · 18/08/2025 09:18

I had daal and roti for breakfast yesterday. Not much cop for GF with the roti, but hot daal would go nicely with a tomato and cucumber salad IMO.

Following with interest! I'm gluten and dairy intolerant and prefer a savoury breakfast too. I use a lot of rice cakes or corn cakes as a replacement for bread/toast. Mostly with eggs or avocado. I don't have time to cook breakfast on a work day, but some of the suggestions sound like they could be made ahead. I hate gf bread - it tastes crap and is full of weird ingredients!

IsItAllMenopause · 18/08/2025 09:59

Buckwheat pancakes.
One cup bw flour, one egg, one cup milk.
Leave in fridge overnight.
Also have you tried polenta?

A friend has a bread maker and makes a seedy gluten free loaf that is genuinely tasty and nice.

CurlewKate · 19/08/2025 07:55

Shakshuka is my favourite breakfast!

I did the same. It can be really good if it is a seed bread rather than an imitation bread.

The loaves don’t last that well so I split the packet and make a few mini loaves or rolls when I need them.

Any chance you could link the recipe? 🙏

When I was in Kenya, we used to go for breakfast at the Indian cafes. It was spicy veggie soup for breakfast, sometimes with some hot, fluffy naan. It was so delicious. That spicy broth woke you up like espresso coffee does. Look up Rasam recipes online. There are loads of them. Bit fiddly - I'd make it in batches.

DH often makes potato cakes. Left over mashed potato with a beaten egg dusted in cornflour (which is gluten free.) You can add spring onions, spices or herbs, cheese etc. Cook in a tiny bit of oil to prevent sticking.

This is a great idea. Buckwheat pancakes are gluten free and delicious. You can put tomatoes, garlic mushrooms, cheese, egg in them then fold them over so they turn into crispy parcels.

I do usually prefer savoury breakfast as well, and recently I’ve been using this app called Foodhak which has an AI assistant that gives me ideas instantly and the recipes have been genuinely delicious. It's free to use as well !

mindutopia · 19/08/2025 13:23

I make these and freeze them and they’re delicious. The recipe uses sausage, but you could sub veg sausages or mushrooms (if well cooked and drained) or do veg and cheese only. I make them in batches, bake, freeze and then you just thaw overnight and microwave/warm in the oven. Very portable as well (I used to take them on the train to eat).

How about the viral cottage cheese pancakes? They come out like a flat bread and you could top with chopped peppers, spring onions etc?

Not vegi but it could be made that way, kedgeree. My aunt makes a batch and freezes it in single portions, a few mins in the microwave and there is her breakfast.

Where do you get buckwheat flour ?

Some supermarkets sell it but the ones I've seen have a may contain wheat/barley/rye warning on so no good for people with coeliac.

Chinese steamed eggs. 🥚
lots of versions on instagram etc.

I tend to stay basic - eggs beaten with same quantity of water, steamed in a bowl, topped with soya sauce, chilli crunch, sesame oil, sesame seeds & spring onions.

I love eating this in the mornings. Eggs take 10 minutes to steam.

Love the sound of these, might have to make them at the weekend.

OP I make a batch of egg bites (Google and you'll find recipes, very versatile so you can put different add ons in, my favourite is feta and roast cherry tomatoes) at the weekend occasionally and freeze them and defrost a couple as needed. I have them for lunch but they'd be perfect for breakfast too.

Sure. This is the packet. I think I will make a version in my blender next time as I have most of the ingredients at home and some are probably not needed. I soak it for longer and make much smaller amounts so reduce the cooking time.

Frittata

mamagogo1 · 20/08/2025 11:52

Though my personal favourite is rice and dal, refrigerates and freezes well

FatherFrosty · 20/08/2025 11:55

Oat banana pancakes

banana, oats, milk (of whatever type) mushed together and fried.
You can use any flour instead of the oats for more traditional ones.
