Need a savory, gluten-free, vegetarian, not too oily breakfast idea

I'm in a breakfast rut, and I can't help feeling that the perfect breakfast for me is out there; I just haven't found it yet.

I don't mind cooking in the morning - I sometimes make myself a quick egg fried rice. Nothing too complicated though because I'm out to work. I do quite like eggs.

I do not eat any gluten-free fake foods like GF bread or GF bagels because they are expensive and xantham gum doesn't agree with me.

I don't like sweet things, and I don't like anything too greasy or oily.

I think maybe I'm looking for something from another country or another country's cooking. I LOVE poha for breakfast (Indian flattened rice and potato) but it's a faff to make. Maybe I need something I can make in advance?

Doves Farm do Buckwheat flour in their Freee range - GF Bigger supermarkets stock it.

Yes I get the Doves farm from Tesco. I'm coeliac. They are really nice with grated cheese. I cook one side for about 2 mins then turn over. Sprinkle grated cheese on the cooked side. They remind me of crepes you get in Paris.
