Need a savory, gluten-free, vegetarian, not too oily breakfast idea

I'm in a breakfast rut, and I can't help feeling that the perfect breakfast for me is out there; I just haven't found it yet.

I don't mind cooking in the morning - I sometimes make myself a quick egg fried rice. Nothing too complicated though because I'm out to work. I do quite like eggs.

I do not eat any gluten-free fake foods like GF bread or GF bagels because they are expensive and xantham gum doesn't agree with me.

I don't like sweet things, and I don't like anything too greasy or oily.

I think maybe I'm looking for something from another country or another country's cooking. I LOVE poha for breakfast (Indian flattened rice and potato) but it's a faff to make. Maybe I need something I can make in advance?

I make sweet potato/ butternut squash hash things- roast the squash with red onion, chilli and red pepper then flatten and fry in individual rounds until all crispy on the bottom. Top with a poached or fried egg.

I sometimes make chickpea (gram or besan) flour fritters with a poached egg on top. You can choose your veg from grated onion, peppers, courgette, sweet corn etc, mix in the flour, add an egg and any herbs or curry flavours you like. Then either fry or cook in an air fryer. Top with a poached egg. 😋

Okay, question - if I get an air fryer, can I make all these fritter / hash / rosti kind of recipes without oil and a frying pan? I feel like I'm eating too much fried food.

Yes. I've only had an air fryer a few months, but am amazed at how crispy some items come out, even compared to the oven! You could use spray oil on the item, depending what it is, but nearly everything I cook in the air fryer doesn't need it.

I think just eat what you like (and would usually eat for other meals)

I do this now as I'm not a traditional breakfast person
It's so freeing.

Mushroom madras for breakfast. Don't mind if I do.
But my favourite is actually cheese and proper pickled onions.

Chop tinned potatoes, fry off with chopped onion. Add egg with salt and pepper. Cook until whole thing is solid. That's about it!

Rice and curry is a common enough breakfast in many parts of the world.

What about corn tortillas? These ones are naturally GF without being a weird set of ingredients and no xantham gum: https://www.sainsburys.co.uk/gol-ui/product/cantina-cali-street-tacos-250g. Serve with refried beans, pico de gallo and anything else you like.

Dosa or upma (typical South Indian breakfast foods), you can 'just add water' versions of both at Indian shops, I add a big cup of frozen veg to upma or have dosa/idly with coconut or tomato chutney or potato masala (if I've had time to make it over the weekend).

I also love a kind of riff on Scottish skirlie - pinhead oats, shredded cabbage and onions, white pepper and salt - all sautéed in a frying pan with a knob of butter - I sometimes add grated carrot/ a fried egg on top. Make a batch and just reheat on the second day - it's delish!

2-3 potatoes (cut thinly)
1 onion (cut in rough squares)
3 eggs (depending on the size and your particular taste)
Olive oil
Salt

In a big pan fry the potatoes and the onions until golden brown. Don't overcrowd the pan, it's better to do it in 2-3 batches than "boiling" the vegetables in oil. You really want crisp potatoes and golden onions. Set aside on a plate with a bit of inclination so the excess oil can pool at the base and is easy to dispose off.

Beat the eggs well and add the potatoes and onions. In a large pan put a bit of olive oil and when you see smoke coming out, add veggie/egg mixture. Reduce heat to medium high, cook for a minute, put a plate on top and flip it.

Repeat the same flipping process 2-3 times until the tortilla looks golden from the outside.

This is the basic recipe for a Spanish tortilla. You can add as many vegetables as you want as long as, again, don't overcrowded the pan when frying. Cheese is NOT an ingredient for this type of omelette.

Mushrooms and spinach? With potato if you feel just the veg would be too light for you.

Do you like beans? Lots of thing you could do with beans and easy to prepare ahead.

Another vote for ful medames here, very filling!
I also love a Turkish style breakfast, fresh cucumber, tomato and peppers with cheese cubes (beyaz), olives and sausages if you like, can add in eggs too.
I quite often eat grains for breakfast (boiled spelt and rye) mixed with pickles, chopped tomato, herbs, feta etc topped with chili sauce. Very quick if you precook the grains as you can just chuck in whatever is in the fridge.

I’ll sometimes make home made baked beans, tin of beans, some passata, veg and chilli bit of sugar or molasses. have with an egg.
