What's on your menu this week?

pontipinemum · 15/04/2024 15:50

I do my shopping most Mondays and I'm stuck for ideas, I do 1 shop per week and usually like to have everything in so I don't do a top up. I am thinking

Spanish style chicken/ sausage/ chorizo rice
Lasagne - batched in freezer
Taco Fries
Chicken curry probably Indian
Chicken stir fry
Roast beef

I don't eat fish or pork (but I do eat bacon/ sausages). I like easy to throw together in the pressure cooker meals. Other usuals would be creamy pasta, curry rice, jambayla, fajitas, savory mince, stew, chicken vol au vont, bacon + cabbage, mac & cheese

What are you cooking?

It's such a chore planning the weeks food!!

pumpkinpiee · 15/04/2024 15:55

Chicken and veg fried rice, pesto salmon with jacket potato and veg, pizza, turkey meatballs and spaghetti, unsure about Friday maybe a takeaway

pontipinemum · 15/04/2024 15:57

@crackfoxy it is but I also find it a chore not to. As in trying to decide every day what to have instead of just having it written on a board. I do move around days if I don't fancy what I have written down for Wednesday but I would say I mainly stick to it. I haven't done schnitzels or kebab for a while

I meal plan too and it's a pain but I can't get to the supermarket very easily so needs must.

Today is Chinese prawn and veg curry with special fried rice and prawn crackers.

Tomorrow, it's just me here, so jacket potato/filling and salad.

Wednesday Indian curry and poppadoms/naan bread

Thursday Giant Yorkshire puds with sausages, carrots, broccoli, peas and gravy.

Friday Me and DC2 are out in the city for the day, so DC1 will have to sort their dinner!

We usually have way healthier meals with plenty of veg but various activities and timings this week affected that.

vincettenoir · 15/04/2024 16:19

@pontipinemum no mine isn't a pretty instagram one. It's just fried rice and Gochugang with any scrag ends in the fridge 😂

Smittenkitchen · 15/04/2024 16:21

I did fennel risotto for lunch today, it was so good. Pretty much an asparagus risotto with roasted fennel and mushrooms on top.

rainontherooftop · 15/04/2024 16:27

Some kind of Italian chicken orzo concoction with lots of chopped veg in it tonigh.
A sesame and ginger minced Turkey meatball and brocolli dish with rice tomorrow.
DH cooking something Wednesday and I've got no further than that with my crap meal planning.

I try and cook dishes that I can chop a wide variety of veg into, as he isn't a big veg fan but will eat anything if it's all mixed in with other things 🙄

Giggorata · 15/04/2024 16:32

Roast duck, roast veg, etc
Macaroni cheese with garlic mushrooms
Omelette, chips and salad
Prawn curry, rice, etc
Spag bol
Roast chicken, veg, etc
Maybe a takeaway

This is for dinner, with any leftovers becoming the following day's brunch, generally used for something else.

Eg, the duck got shredded and rolled up in wraps with lettuce and hoisin sauce and the macaroni cheese has a tin of anchovies smashed over it, with capers and more grilled tomatoes.
If there aren’t any leftovers, we generally have something a BLT, egg mayonnaise and salad or grilled black pudding and ratatouille.

Inextremis · 15/04/2024 16:38

Tonight it's venison burgers (bulk bought 48 of them when they were on special offer), chips and salad
Tomorrow (Tuesday) it's something with chicken breasts and kefir - I want to see if kefir tenderises them like buttermilk does - so probably sweet 'n sour chicken with fried rice.
Wednesday - baked potatoes with homemade Boston baked beans and bacon, topped with cheese
Thursday - Singapore noodles, or paella, or risotto - using chicken and prawns, anyway
Friday - DH has a Tesco lasagne, I have homemade curry (he's gone off curry) with shredded lettuce instead of rice
Saturday - homemade pizza topped with mushrooms, peppers, black olives, anchovies, pepperoni, mozzarella
Sunday - roast something - we may have a guest, in which case it'll be beef. If it's just us it'll be chicken.

isitbananatimealready · 15/04/2024 16:41

Today's dinner is yesterday's leftover chicken in a korma sauce with added leeks, cauliflower and sliced courgettes, with rice.

CosmosQueen · 15/04/2024 16:54

Spicy carrot and parsnip soup with crusty baguette
Green Thai chicken curry with rice
Sausages, mash and onion gravy
Steak and chips
Jacket potato with tuna mayonnaise and salad
Marinated chicken, rice, sweetcorn and peas
Whatever is in the fridge!

pontipinemum · 15/04/2024 17:06

@Inextremis do you buy the pizza base? I have gestational diabetes right now and I've been have wrap pizza which does hit the spot.

@rainontherooftop I made chicken/ ginger/ garlic meatballs recently. I bought a 5 kg box of chicken and diced most of it and froze into portions. But I took off maybe 1/5th of each fillet where the not nice bits are are blended it. It was unreal tasty but took a bit of effort. Although in fairness I had about 5 dinners from it.

@CosmosQueen for my sins I am back at college 'Marinated chicken, rice, sweetcorn and peas' sounds really good/ easy for tomorrow I've an online lecture from 6.30 - 9.30pm.
