What's on your menu this week?

pontipinemum · 15/04/2024 15:50

I do my shopping most Mondays and I'm stuck for ideas, I do 1 shop per week and usually like to have everything in so I don't do a top up. I am thinking

Spanish style chicken/ sausage/ chorizo rice
Lasagne - batched in freezer
Taco Fries
Chicken curry probably Indian
Chicken stir fry
Roast beef

I don't eat fish or pork (but I do eat bacon/ sausages). I like easy to throw together in the pressure cooker meals. Other usuals would be creamy pasta, curry rice, jambayla, fajitas, savory mince, stew, chicken vol au vont, bacon + cabbage, mac & cheese

What are you cooking?

Dinners: Chilli was yesterday, spaghetti Bolognese tonight then
Chicken curry with naan
Homemade pizzas (courtesy of bread maker for the base)
Sausages, mashed potato, leafy greens and carrots
Tacos and salad
Beef stew and dumplings
Roast dinner (haven't decided on veg and meat yet).

Inextremis · 15/04/2024 18:08

@pontipinemum no, I don't buy the pizza base - I make my own (for 2 x 12" pizzas) using 333g of strong bread flour and 200ml water, a packet of quick yeast (Tesco), a glug of olive oil and some mixed Italian herbs. If I'm low carbing (good for diabetes!), I make a base out of cream cheese. parmesan and eggs with the aforementioned Italian herbs. You have to bake it in a dish (before adding the toppings), but it hits the pizza spot - even has a bit of crunch on the edge if you layer up the parmesan!

anonhop · 15/04/2024 18:20

Tonight is lasagna with rocket tomato salad and garlic dough balls (dough balls left over from Saturday)

Tuesday is baked lamb chops and cauliflower cheese with rocket and tomato or normal salad.

Weds is rest of lasagna with tenderstem Broccoli and beans

Thursday is home baked ham from the freezer with the rest of the cauliflower cheese and Broccoli and beans

Friday is cabbage stir fried with ginger garlic spring onion and chilli oil for the adults served with brown rice or noodles and then with either fry prawns with same flavours or may serve with a fried egg as the recipe suggests.

I do a lot of cooking on a Monday to roll out food for later in the week and I make big meals that will last more than one meal.

Edit to add I meal plan in the week then freestyle something nice and fresh at the weekend. At the moment I fancy going to the posh fishmongers and getting sashimi salmon to do poke bowl style with edamame beans and will probably grill hake a garlic butter on Sunday. Often we go out.

Tonight it's venison burgers (bulk bought 48 of them when they were on special offer), chips and salad
Tomorrow (Tuesday) it's something with chicken breasts and kefir - I want to see if kefir tenderises them like buttermilk does - so probably sweet 'n sour chicken with fried rice.
Wednesday - baked potatoes with homemade Boston baked beans and bacon, topped with cheese
Thursday - Singapore noodles, or paella, or risotto - using chicken and prawns, anyway
Friday - DH has a Tesco lasagne, I have homemade curry (he's gone off curry) with shredded lettuce instead of rice
Saturday - homemade pizza topped with mushrooms, peppers, black olives, anchovies, pepperoni, mozzarella
Sunday - roast something - we may have a guest, in which case it'll be beef. If it's just us it'll be chicken.

I'd love the recipe for the Boston baked beans if you have it!

QueenofLouisiana · 15/04/2024 22:35

Tonight was quorn, pepper, black bean wraps and salad.
Rest of the week:
mac n cheese with broccoli.
Fritatta with green beans

veggie curry (with paneer if I can find some)
Friday is my mum’s birthday, I’m treating her to a takeaway, she’s chosen fish and chips.

So many of these dinners sound amazing!

I tried to make Spanish rice last night but realised the paella rice was in fact orzo but it tasted good. (I don't feel I can call what I make paella so I call it Spanish inspired rice!)
