I do my shopping most Mondays and I'm stuck for ideas, I do 1 shop per week and usually like to have everything in so I don't do a top up. I am thinking

Spanish style chicken/ sausage/ chorizo rice
Lasagne - batched in freezer
Taco Fries
Chicken curry probably Indian
Chicken stir fry
Roast beef

I don't eat fish or pork (but I do eat bacon/ sausages). I like easy to throw together in the pressure cooker meals. Other usuals would be creamy pasta, curry rice, jambayla, fajitas, savory mince, stew, chicken vol au vont, bacon + cabbage, mac & cheese

@Giggorata yes I put loads of veg into what I cook as well or cook frozen veg to have with it. I like spouts and cauliflower mainly

We tend to have some sort of pasta on Monday, sort of curry on Friday and fish at least twice during the week.

This week from Sunday:
Halibut fillets oven cooked
Pasta - bacon, spinach, mushrooms, cream cheese + milk
Spanish omelette and salads
Prawn stir fry
Hotpot (we all said we wanted warming up this week)
Lamb curry
Saturday undecided

More sturdy than our usual menu, by April usually way more meals that are salad rather than veg accompanied

We had/are having

Chicken and orzo with a paprika, sundried tomato and Parmesan creamy sauce (the cream coming from light cream cheese)

Gammon, egg, chips and beans (peas for the weirdo!)

Chilli

Thai chicken and rice bake

Homemade Lamb doner wraps with salad and sweet potato wedges

I love it after I’ve meal planned and shopped and have no waste and am organised - I just hate doing it!

@Chelsea26 do you blend the sun dried tomato and philly? It sounds lovely. I have a jar of toms to use up.

Oh haven't done gammon for a while, we have it with mushy peas!

M: we had sausages, potato wedges with carrots & broccoli
T: chilli from a batch cook made last week, with jackets
W: Curry (cooked double so remainder on Sunday)
T: Chilli again or bought higgedy pies with veg
F: Whichever of the above two options we didn't have on thur
S: Takeaway pizza night
S: Leftover curry from Wed.

Hmm - trying to remember what I did…

Chop chicken and toss with paprika (hot and smoked), thyme and S&P.

Brown chicken in a pan with a bit of the sundried tomato jar oil then remove

Add a chopped onion, crushed garlic and chopped red pepper to the same pan and cook until softened

Add in orzo, 5 finely chopped sundried tomatoes, more S&P and paprika and cook for a minute

Add in chicken stock and cook covered, stirring occasionally, until the orzo is mostly cooked.

Stir in two big handfuls of baby spinach and third (ish) of a pack of light cream cheese and a large handful of Parmesan and cook till spinach is wilted and everything is hot.

It was really good, one pan and quite forgiving so you could substitute/leave out what you have/don’t have…

This week I have a stinking cold:
Monday: takeaway
Tuesday: roast pork in baguettes with barbecue sauce, fried onions, melted cheddar and a side order of corn cobettes and coleslaw.
Wednesday : more toasted pork made into a pork and mushroom stroganoff using a packet mix, rice.
Thursday; chicken stuffed with spanakopita filling, baby corn, green beans and sweetheart cabbage.
Friday: fridge surprise
Saturday: out
Sunday; roast chicken with traditional trimmings.

Update:
The rolled breast of lamb was better than I expected it was very tender I cooked it slowly at a lower temperature. I made stuffing from a recipe I think was a Jane Grigson (modified by family) with lots of apricots in it.
Good value, a nice midweek treat.

I've only recently got back into cooking, it's just me so it seems a bit joyless, but I'd got into terrible food habits.

@WibblyWobblyWeeble it can be hard cooking for 1. When I lived alone I had a tiny freezer, just that little box so batch cooking wasn't hugely practical. But I did usuallly cook for 2 and freeze one portion so each week I'd cook/ have a freezer meal/ cook/ freezer

Good value, a nice midweek treat.

I had something similar to that at my mums recently. We did it in the airfryer for 1.5hrs, her oven is broken. Super tasty.

DH hates lamb so I have it when I visit her

I'm away 2 nights this week but needed to think of two dinners that will do for the night we get back + night after as I won't have shopping in.

Chicken curry + rice/ vegi
Spag bol - double cooking for next week too
Chicken fajitas
Mac and Cheese + chicken and veg

Beef stir fry - prob with soy, ginger, garlic, tiny bit of 5 spice, sesame seeds + oil. I'll double cook this too but only freeze half the beef. It's cheap beef so I'll slow cook it or pressure cook. To the now portion I'll add stir fry veg and noodles

Burgers + frozen mash (I freeze it in muffin cups) + frozen veg for the night we return

Mon: mixed curries/ freezer batch cooked thali
Tue: gnocchi with spicy bolognese
Wed: soup and toasties (leftover Sunday roast)
Thursday: meatball stew (Schwartz mix) with couscous
Friday: roasted cabbage wedges with blue cheese sauce, spicy roast chickpeas and whipped feta.
Saturday: freezer surprise (but probably pulled pork in wraps with corn on the cob)
Sunday: crispy roast duck with salads and matchstick chips with Hoi sin or plum sauce (whichever I have time for).

Sat - lamb koftas, grilled halloumi, dips, salad, flat breads
Sun - cold roast chicken, buttered new potatoes, coleslaw and yet more salad
Monday - slow cooker 5 spice pork shoulder steaks, egg noodles, stir fried veg
Tuesday - stuffed jacket potatoes (cheese and bacon) with steamed veg
Wednesday - King prawn coconut curry and spinach rice
Thursday - Spaghetti and meatballs
Friday - Salmon fillet, veg and potatoes (probably wedges as I have some large spuds to use up)

Copied and pasted from another thread i am on so am already part way through my plan.

In no particular order.
Bhaji burgers, cucumber and tomato salad and raita with mini poppadoms for scooping.
Chicken shashlik with pitta and leftover salad and raita.
Honey and mustard gammon, cabbage, cauliflower cheese, peas and jersey royals.
Cabbage roll soup, I always add macaroni to this and it does a few lunches too.
Mexican turkey burgers with wedges and jalepeno slaw and extra guac as I love it.
Mexican shakshuka with baguette for dipping.
Steak Ramen with gyoza and crispy kale.

My weekly menu is easier to show than write out. I usually do it on Monday morning.
I’m in Italy so one pasta meal a day is a given!
It’s been 10 days since our last big shop so a lot of it is homemade soup, dried legumes, stuff from the freezer or pasta.
Fresh fruit and veg aren’t specifically mentioned but are included.
I make my own flatbread (piadina) and sugo (pasta sauce).
Out for lunch on Sunday!

@Sgtmajormummy I had to look up sugo I made something like that last summer. We grew a LOT of tomatoes! I froze most of it

These basically a big burger shaped onion bhaji 😂. Trying to have. A few meat free meals a week and these go down well.
