I do my shopping most Mondays and I'm stuck for ideas, I do 1 shop per week and usually like to have everything in so I don't do a top up. I am thinking

Spanish style chicken/ sausage/ chorizo rice
Lasagne - batched in freezer
Taco Fries
Chicken curry probably Indian
Chicken stir fry
Roast beef

I don't eat fish or pork (but I do eat bacon/ sausages). I like easy to throw together in the pressure cooker meals. Other usuals would be creamy pasta, curry rice, jambayla, fajitas, savory mince, stew, chicken vol au vont, bacon + cabbage, mac & cheese

What are you cooking?

@SDTGisAnEvilWolefGenius

It's this good housekeeping recipe but I add some chopped smoked streaky bacon to it when frying the onions.

@TheMainCharacter I often have freezer surprise too 😁although it's usually single portions of left overs, my mam lives alone so if she's been for the weekend she might clear me out 😂I don't mind

@pontipinemum We never have enough leftovers to do another meal for all of us but by putting them all in the freezer I can pull out a random selection after a few weeks. Rubbish at labelling them though so it really is a surprise!

pontipinemum · 17/04/2024 10:30

@TheMainCharacter I have a label maker 😂after 1 too many times of having no clue what was coming out of the freezer I got one. I batch cook a lot of curry/ pasta sauces as well so it was annoying

@Madickenxx I have gestational diabetes so low carb is my life right now. What low carb pasta do you use? I've just been using regular pasta but having about half my plate with veg. The cauliflower mash sounds good!

@pontipinemum , I use The Low Carb Food Co pasta but have seen that Ocado do a lower carb pasta so am planning on trying that soon. The LCFC pasta is OK as long as it's mixed in with the sauce. It's not particularly nice on its own and I use it mainly so I don't feel left out on pasta night. It's full of fibre so healthy but the recommended portion size is teeny tiny.
