best flapjack recipe: does it exist?

If I use rolled oats, the flapjack is dense, firm but a little tasteless.
If i use jumbo oats, the flapjack falls apart.
I had a recipe that used both types of oats, but alas I have lost the recipe!
I can't re-create it, and am wasting oats, golden syrup, sugar and baking marg on sub-standard results.
My flapjacks tend to turn into granola .
Please share your foolproof flapjack recipes, including what temperature you put the oven on at, cooking time, and size of baking tin, thanks!
I have sporty kids and flapjacks are a perfect pre-sport snack!

I'd go with the 20x20 one as I think that's smaller overall than the recipe says.

If you use a bigger tin you'd need more mixture.

thank you - how would you amend the cooking time? Also is your oven fan?

I wouldn't necessarily change the baking time. The time given is basically "check to see if it's done around this time". It's very much a "cook it til it's just under done" thing. If you judge it by the description in the last step you should be OK. All ovens cook slightly differently - I think mine takes a bit longer than the recipe says for example.

I’ve just taken mine out of the oven…I’m hoping they get a lot firmer when cold!
I did lick the spoon after scraping into the tin, I can really taste the syrup so they seem a touch sweet, but I’m looking forward to actually eating a square to see for sure.

Now I know it’s fancier than what you’re anticipating but this is not just the best flapjack recipe in the world, it’s one of the nicest tea time treats I’ve had. Granted I made them and froze them for post birth breastfeeding so was sleep deprived and emotional 🤪

The condensed milk is a game changer.

It is indeed - when ive used a recipe with CM it is the only recipe that has ever worked for me. All other recipes tend to fall apart and are a bit tasteless - but condensed milk changes that.

Going to write this recipe down in my own recipe book for safe keeping

I need to give these a try. I usually make the River Cottage flapjack recipe.

On the topic of condensed milk, I always use it to make the filling for a lemon meringue pie and find it very successful.

I've just made the @SoupDragon Flapjacks and they are amazing! They're basically the perfect flapjack. I've not been this impressed by a recipe for a long time!!

I'll be trying Soupdragon"s recipe, but this is my favourite. I cut down on or omit the spices.

However, I’m puzzled by the fact that everyone is struggling to know what to do with the left over condensed milk… I’d just get a teaspoon out and retire to a corner! (Yeah, yeah…. Just make double the recipe 😄)

I just got really excited after reading this thread as thought I had some condensed milk in the back of the cupboard. Turns out it was this tin (use by date March 2016 🤣).

Maybe I'll have to make scones instead!

@Heyhoherewegoagain what is your recipe?
Lots of people have posted lovely recipes with nuts/dates/raisins etc, however I am just wanting plain old flapjack.
@SoupDragon I was very interested to see your very popular recipe with the condensed milk, as I always have some in the cupboard for millionnaires shortbread!
However the end product was not what i was after, too soft and could taste the condensed milk (maybe 1/4 of a tin would surfice for us). Even my son who didn't know the recipe said they smelled of milk! Glad others like them though!
What I have done in my bid for the perfect flapjack is to have bought a slightly smaller baking tin and am going to revert to an old fashioned recipe, and try to squish down the mixture more tightly before cooking. I will do so this weekend and if I get the results I hope for, I will share the recipe.

@AThickLayerOfLard neither, they are plain flapjacks in the RC Baking Handbook by Pam Corbin. I would never willingly put coconut in anything Smile

I’ve just looked up the recipe online, there is an optional tbsp of coconut but I’ve never added any.

Sometimes my dd adds poppy or flax seeds if she’s making them. But I like them plain.

ps. The traffic cleared so the flapjacks made it to my dad’s intact!

It’s soft and too crumbly.

I take it back.

I tried again, increasing the amount of syrup by cleaning the spoon properly, I’d doubled the amount of ingredients and it was in a big tin so I increased the cooking time to 20mins.

I added some pumpkin and sunflower seeds along with some apricots and cherries and it’s bloody gorgeous! 😋
