best flapjack recipe: does it exist?

If I use rolled oats, the flapjack is dense, firm but a little tasteless.
If i use jumbo oats, the flapjack falls apart.
I had a recipe that used both types of oats, but alas I have lost the recipe!
I can't re-create it, and am wasting oats, golden syrup, sugar and baking marg on sub-standard results.
My flapjacks tend to turn into granola .
Please share your foolproof flapjack recipes, including what temperature you put the oven on at, cooking time, and size of baking tin, thanks!
I have sporty kids and flapjacks are a perfect pre-sport snack!

@SoupDragon I have a version that someone gave me as being yours with sugar in!! Have I been duped? They're like crack. Even previous flapjack hating DS loves them and all of teen DS friends went mad for them when they went camping - I was offered a fiver to make some more

No, you just have an older version before I decided to try dropping the sugar entirely. 🙂

If you look at the ingredients for the tubs of soft, shop bought flapjacks, they often have it in. I think that's how the original recipe search started.

Carnation is evaporated milk, not condensed.

We love Soupdragons recipe here. As an alternative Nigella's breakfast bars are also condensed milk based and amazing. I use a mixture of all nuts/seeds/cranberries an no oats for those ones.

I think I made them wrong as well but I'm pretty sure I know what it was, I didn't bring the liquid mix to a boil, I started to but my wooden spoon started catching on the bottom so I thought I was burning it 😬 so I stopped.
Any tips @SoupDragon ? Please and thank you.

Maybe an imbalance of oats v wet ingredients? I'm not sure as I don't think I've ever had a problem.

I tried this recipe but added a handful of extras - sultanas, chopped glacé cherries and chopped dates and apricots. The flapjacks were gooey rather than crunchy (was they what you expected?), but absolutely delish.

You need to let it come to a rolling boil. The condensed milk changes texture as it reaches boiling point and the whole mixture becomes thicker. Then you can add the oats once the heat is off and you can pour it into the baking dish.

It should be a bit jiggly when you get it out of the oven and once it cools the end result is squidgy but firm and not crumbly at all.

I use one I got from
Mumsnet in 2006 when my DC were tiny. Good as no sugar but no doubt SoupD one is more delicious! It's good to use up tired bananas. I bung them in the freezer when I have too many and defrost to use when I'm making this. Little children can help with the mashing and mixing.

Banana and date flapjacks

3 medium bananas, mashed
1 cup chopped dates
⅓ cup vegetable oil
Splash of vanilla extract
2 cups oats

Mix together. Put in greased tin.

Bake for 15-20 mins at 180

@grababanana I use that one all the time but instead of the processor, which takes more washing, I just heat the fat & sugar in a pan on a low heat and then stir the oats in. It’s a brilliant recipe.

I will be trying the condensed milk version now, I do have a tin in my cupboard.

I don't have a problem making flapjacks, but what I want is a low sugar version. I am trying to make oat/seed/nut/chocolate chip flapjacks/cereal bars. I realise I need something like honey, syrup, honey, condensed milk to make everything stick together.

Anyone got the lowest fat/sugar version? I don't care about the calories from nuts, seeds etc - I just want to use at little sugar as I can. I only use butter in baking.

I'd go with the 20x20 one as I think that's smaller overall than the recipe says.

If you use a bigger tin you'd need more mixture.
