best flapjack recipe: does it exist?

If I use rolled oats, the flapjack is dense, firm but a little tasteless.
If i use jumbo oats, the flapjack falls apart.
I had a recipe that used both types of oats, but alas I have lost the recipe!
I can't re-create it, and am wasting oats, golden syrup, sugar and baking marg on sub-standard results.
My flapjacks tend to turn into granola .
Please share your foolproof flapjack recipes, including what temperature you put the oven on at, cooking time, and size of baking tin, thanks!
I have sporty kids and flapjacks are a perfect pre-sport snack!

The only flapjack recipe I will use is the one in “Usborne farmyard tales children’s cookbook”.
6oz marg (or butter, both work)
6oz Demerara sugar (or soft brown)
2 tablespoons of golden syrup
8oz oats (I always use regular oats).
7x11 inch shallow tin.
Oven 160c.
Marg, sugar and syrup in a pan, melt together. Pour melted mix into the oats, mix well. Tip into tin and spread out. Bake 18-25 mins (depends on the oven).
I have never had this recipe go wrong, sometimes I add stuff like fruit or desiccated coconut and it’s still fine.

That's the exact one I use! It's great!

Absolutely!

The original recipe had sugar in it but the flapjacks were so sweet you could feel the enamel being stripped from your teeth. I gradually reduced it to nothing through rigorous testing.

In a way I wish I lived in a world where I had not discovered @SoupDragon 's flapjacks. They are incredible. The next batch will have some additional stuff added but as a base they are absolutely scrumptious. Will have to space out the making so I can fit into my clothes.

Why, yes it does exist...

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous tablespoons (75g) Golden Syrup
half a tin condensed milk

baking tin, no bigger than about 18cm x 28cm

Method:

  1. Preheat the oven to 160 degrees c
  1. Line the baking tin with baking parchment.
  2. Melt the butter in a large saucepan over a medium heat and add the syrup. Keep gently heating and stirring until all is melted and mixed.
  3. Add the condensed milk and mix. Bring to the boil for about a minute. If I'm honest, I just bung the milk in at step 3.
  4. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  5. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  6. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooling.

This looks an awful lot like I recipe I know as Flapcrack, specifically HaloHoney’s flapcrack. And I wonder if it has the same source?

I just asked DH which was the best flapjack recipe- Soupdragon's recipe

I double it and use the whole tin of condensed milk, why make a small tin when you can make a big tin full and usually add a few extras: sultanas, choc chips, dried apricots, glacé cherries, desiccated coconut, take your pick. Added ginger and/or cinnamon is good too. I cook it for a bit longer than stated as we prefer it to be a bit more munchy.

So, I've just done my research and I found the original recipe online in September 2006 in response to a MN thread asking for a recipe including condensed milk. I found a blog with Halohoney saying she created a recipe to mimic M&S flapjacks in 2008. I can only assume we found the same "original" source. Hers has the sugar I decided could be left out to reduce the sweetness.

there's no such thing as an original recipe 😂😂

Could I use caramel flavour condensed milk? (Because I have one in the cupboard!) Or would that be yuck?

It feels wrong to put condensed milk onto flapjacks😫 but this thread disagrees. I've screenshot and will have to come to terms with it, to try.

However, I prefer a crunchier flapjack, would this create a more chewy one?

I don't use a recipe I usually eyeball it.

Butter (real, salty, always), oats, golden syrup and additions!
