Interesting jacket potato fillings

We've been having a lot of jackets recently as they're pretty cheap but nice and warming. However I'm starting to get a bit bored of the tuna / cheese / beans / chilli roundabout we're currently on.

Would love some unusual but tasty ideas that don't cost the earth please!

A friend of mine used to serve baked sweet potatoes with sour cream and fresh chillies. They were divine.

I like them cottage cheese with herbs, sesame seeds and chopped spring onion.

Also love baked potatoes with home made slaw - red cabbage, carrot, walnuts, caraway seeds in a mayo and yoghurt dressing

How about pesto and mozarella

Or feta, sun dried tomatoes, black olives and red onion with some fresh basil.

Scoop the middle out, mash it up and stir in some chopped fried bacon, herbs, garlic and cheese. Scoop it back into the skins, sprinkle cheese on top, put under the grill for 10 mins.

I like having feta cheese mixed with sweet chilli sauce- cheap and tasty and fills you up.
I also like chilli on my potato- easy to make a big pot if it, some cheese/sour cream on top if you fancy.
And sometimes, I like to have a jacket potato, with butter and salt as the side accompaniment to a nice big bowl of tomato soup!

If you usually have plain tuna try mixing with red onion, peppers and sweetcorn is nice

Fry a chopped onion in butter with a diced cooking apple. Grate some cheddar. Mix with the scooped out cooked flesh of the potato, salt and pepper, return to its skin and bake for another 15 minutes.

Here's something really different! I went to a jacket Potato shop here in Italy recently. have a photo of their menu still on my phone which I've uploaded. I realise many of these ingredients would be expensive in the UK, but it's just to give you an idea. I had the Carbonara one, OMG it was so good, DH had one with Gorgonzola, Walnuts, Rocket & raw ham ( Parma Ham). I love mine with hummus or melted Stilton.

Smoked salmon offcuts (or hot smoked salmon), sour cream and chives (you can use the pre-made dip from the supermarket)

Sauté a leek in butter, pile onto jacket potato, cover with cheddar, eat with a bit of grain mustard

I once had one in a pub with prawns in garlic butter. I haven't forgotten it even though it was over 30 years ago! Not sure I'd be able to recreate it so have never tried.

Bolognese is lovely with a sprinkle of cheese on top
Cottage pie ( save some before you add the mash)
Corned beef and beans.
Sausage and beans, tin if you're feeling lazy or proper if not.
Pulled pork.
Fancy a jacket now but dinners in the oven 🤣

I cook frozen leaf spinach with a little yogurt, pepper, nutmeg, spring onions if I have them.

Stuff the spuds with this, make a ‘nest’, break an egg into it, grate Parmesan over the top and put back in the oven til the egg is cooked.

Corned beef fried with spring onions and sweetcorn, mixed with the potato, back in skins with cheese melted under the grill.

Roasted chicken thigh fillets (or roast legs/drumsticks with meat taken off bone for cheaper option), diced and mixed with mayo, finely diced pepper, sweetcorn and dried tarragon, salt and pepper.

lamb neck casserole (not that cheap these days).

slow cooked pork shoulder in cider (cheap if shoulder used for several meals)

Finely sliced leeks, sautéed until soft, stir through some garlic and herb soft cheese and lots of ground black pepper. You can also add mushrooms before sautéing and/or some sliced wafer thin ham at the end
