Interesting jacket potato fillings

We've been having a lot of jackets recently as they're pretty cheap but nice and warming. However I'm starting to get a bit bored of the tuna / cheese / beans / chilli roundabout we're currently on.

Would love some unusual but tasty ideas that don't cost the earth please!

Scoop out the soft potato. Mash in a small bowl with cream cheese and finely chopped spring onion or red onion and black pepper. Stuff it all back in the skins. Top with grated cheddar and grill.

A friend of mine used to serve baked sweet potatoes with sour cream and fresh chillies. They were divine.

I like them cottage cheese with herbs, sesame seeds and chopped spring onion.

Also love baked potatoes with home made slaw - red cabbage, carrot, walnuts, caraway seeds in a mayo and yoghurt dressing

How about pesto and mozarella

Or feta, sun dried tomatoes, black olives and red onion with some fresh basil.

🙄 great...

Now I'm hungry for all those

I do gigantes (Greek beans) in the slow cooker. The basics are butter beans and chopped tomatoes with garlic, onion and oregano. I am a heathen and add crushed chilli and Worcester sauce though.

Nduja is a rich spicy spreadable Italian sausage.

You often see blobs of it on pizza's or you can spread it on crusty/toasted bread, add to a tomato sauce to make a pasta ragu (or use it to enrich pretty much any stew/casserole) or scoop some into a jacket potato in this context and I'd be tempted to top that with a bit of wilted spinach and some ricotta.

It's really flavourful so a little goes a long way.

Back in the day we had a Tastie Tattie takeaway place nearby and my favourite filling was Tuna Rice Salad I make my own version sometimes. Mayonnaise, tuna ( in spring water) and red onion mixed with some cooked rice and a chopped up hard boiled egg, it makes for a real filling meal even though it’s a cold topping and makes a tin of tuna go a long way.
Otherwise left overs all the way, favourite would be vegetable curry or vegetables in a satay sauce.
