Interesting jacket potato fillings

We've been having a lot of jackets recently as they're pretty cheap but nice and warming. However I'm starting to get a bit bored of the tuna / cheese / beans / chilli roundabout we're currently on.

Would love some unusual but tasty ideas that don't cost the earth please!

Chicken, mayo, sweetcorn, avocado

Leek and blue cheese

Tuna with coleslaw on side

Smoked salmon with grated carrot on side with dressing

Corned beef with pickled red cabbage on side

How about some chickpeas cooked with ground herbs and spices (cumin, coriander, chilli, turmeric, clives etc - or just a good old garam masala?) , add some coconut milk , a touch of tomato puree and you're good to go!!

Cheesy pasta thats been grilled with extra cheese on top so it has a yummy crust on top, served on a buttery JP. Yes its carb overload but omg its divine. My deathrow meal

Wrt the actual potatoes, I’ve discovered that if I pack my oven with them to cook, , then cool and open freeze the spare ones, they can be defrosted either on the worktop or via the microwave when you reheat them.

… or have you all been doing this for years? 🤣🤣

@wednesdaynamesep probably not for the reheated ones, but at a time when saving energy is a priority, I thought it was worth mentioning.

Anyway, aren’t they just vehicles for a fabulous topping?? 😊

We sometimes have heavily buttered baked potatoes with broccoli, grated cheddar, salt and pepper and a slice of ham - zero fuss, you feel virtuous having loads of green on the plate and it tastes delicious - it's not particularly unusual but a winning combo imo. "Broccoli cheese" would work but obviously more hassle making a sauce. To splash out / go really wild we add a bit of coleslaw on the side! Grin
