Interesting jacket potato fillings

We've been having a lot of jackets recently as they're pretty cheap but nice and warming. However I'm starting to get a bit bored of the tuna / cheese / beans / chilli roundabout we're currently on.

Would love some unusual but tasty ideas that don't cost the earth please!

Not read thread but veggie chilli/ (or meat) cheese and soured cream, with a side salad

my death row meal, cheese first then chill then the soured cream
can make the chill in batches in small portions especially for this delightful purpose 🐷

Fry a chopped onion in butter with a diced cooking apple. Grate some cheddar. Mix with the scooped out cooked flesh of the potato, salt and pepper, return to its skin and bake for another 15 minutes.

I cook frozen leaf spinach with a little yogurt, pepper, nutmeg, spring onions if I have them.

Stuff the spuds with this, make a ‘nest’, break an egg into it, grate Parmesan over the top and put back in the oven til the egg is cooked.

A friend of mine used to serve baked sweet potatoes with sour cream and fresh chillies. They were divine.

I like them cottage cheese with herbs, sesame seeds and chopped spring onion.

Also love baked potatoes with home made slaw - red cabbage, carrot, walnuts, caraway seeds in a mayo and yoghurt dressing

How about pesto and mozarella

Or feta, sun dried tomatoes, black olives and red onion with some fresh basil.

Sour cream and chive or spring onion is fabulous. Cheese & coleslaw also a favourite

Look for the BBC good food veggie lasagne but just make the tomato sauce recipe and put some chilli flakes in too. It’s a lovely chunky veg sauce that goes great with jackets. Also rice or mixed into pasta (it makes loads!)

I take whatever veg is hanging about like onions, red peppers, courgette, mushroom, fennel, cauliflower or broccoli florets ...and roast in a very hot oven covered in a drizzle of oil, and some herbs. Then serve on split jackets generously covered in philadeplhia, spoonful of pesto then a spoon of roasted veg over. It's simple but always really nice. Makes a good pasta sauce too.

I like ratatouille in a jacket potato - just made with any vegetables in a sauce of tinned tomatoes.
Also - not very interesting - sweetcorn with lots of butter and seasoning.
Adding marmite as well as butter to a cheese/beans filling.

Greek Salad

Homemade sausage rolls and beans (cook all in oven together)

Or potato skins like someone else said with bacon, spring onions, sour cream and cheese.

Avocado, bacon, and chicken with French dressing.

Prawn cocktail with “crab” sticks cut up and mixed in the Marie Rose sauce along with the prawns, lots of pepper and lemon juice.

Scoop out the soft innards of the potato after baking, mix in a bowl with butter or sour cream, cheese (I like a smoky cheddar), chives, and bacon bits. Refill the skins, scatter more grated cheddar on top, and grill til heated through and melty.

Cream cheese, smoked salmon off -cuts, topped with pepper and dill.

I LOVE a jacket potato!

My mum used to scoop out the insides mash with butter out some back in, crack an egg and top with the rest and put its little hat back on!
