Vegetarian option help!!

Hi all

Planning a surprise wedding anniversary party and have to choose the menu.

A few of the guests are vegetarian so I'm struggling with the options for starters.
Which one would you pick?

A. Caramelised onion tart cucumber & radish salad

B. Smoked aubergine served with flatbread, pomegranate soy yogurt, sesame seeds & garden mint salad

C. Twice baked cheese and spinach soufflé

Trying to keep it classy but also please everyone & none of the 3 options jump at me. It's not an option to let the guests choose as it has to be picked before the day and all have to have the same plate of food.
Please help 😂

If it helps the main is carrot & chickpea cakes with coconut sauce

I can’t eat gluten though, so that would rule out option A for me, and B if the bread wasn’t GF - I think the soufflé would probably be gluten free as well as vegetarian. Might be good to go with C, or have B with a gluten free bread , as then you also have a gluten free choice for those who might need it ?

I'd love B, A sounds ok but is the standard fare at weddings etc and then I'd try and eat C politely but I really don't like soufflé

Will definitely take all of your thoughts in consideration. Will count at the end which starter has the most votes.

Not sure why most of the vegetarian options are actually vegan 😅 maybe in case there's a few vegetarians and a few vegans the venue can give them all the same plate of food? It must be easier for the venue

A little unfair to the vegetarians IMO

I would have said soufflé but texture wise with the main it might all be soft? I like the sound of the onion tart in that case

I'm veggie and they all sound lovely. I'd deffo choose the soufflé though as it just feels more luxurious.

b, because if for some reason they don't like the aubergine they can eat the flatbread! On the same note can the sauce on the main be on the side? Cakes sound lovely but covering them in coconut would ruin them for me!

My order of preference would probably be B, A, C. It's a good thing they all have to have the same, as I'm terrible for the post-order regret, and staring at other people's plates.

with the caveat that while I adore the sound of B I think that has the most potential to miss the mark and end up very disappointing. So if you don't feel they can nail it, then I would divert to A or C. I actually think they all sound nice.

id chose the onion tart
you can precook aswell

ps soy yoghur is not everyone’s cup of tea and vegetarians are getting peeved being classed as vegans these days.

amazed at how many have gone for soufflé as first choice
Id be too busy to do a soufflé
Plus I d want to enjoy the evening not be totally chained to the kitchen

Precooked tart for me.
