Vegetarian option help!!

Hi all

Planning a surprise wedding anniversary party and have to choose the menu.

A few of the guests are vegetarian so I'm struggling with the options for starters.
Which one would you pick?

A. Caramelised onion tart cucumber & radish salad

B. Smoked aubergine served with flatbread, pomegranate soy yogurt, sesame seeds & garden mint salad

C. Twice baked cheese and spinach soufflé

Trying to keep it classy but also please everyone & none of the 3 options jump at me. It's not an option to let the guests choose as it has to be picked before the day and all have to have the same plate of food.
Please help 😂

Vaguely amused by all the vegetarians complaining about sometimes only being offered vegan options, after decades of hearing a subset of earnest veggies telling omnis, "Nobody needs meat, surely you can handle one meal without it?" and patiently explaining that both omnivores and vegetarians can eat veggie food. I'm sure these are two separate groups of vegetarians, of course.

I think it's different situations - at least I am a vegetarian who has said that about omnivores complaining that they cater to vegetarians but when they go to a vegetarian's house for dinner, the vegetarian doesn't cook them meat. But I wouldn't say that about an omnivore who didn't want to go to a vegetarian restaurant.

I don't expect vegans to cook anything other than vegan food for me but I do want some vegetarian options at restaurants

I'm sure you personally have only ever said it in perfectly reasonable situations like a vegetarian host, Everyday. As I said, it's a subset of veggies I'm thinking of. My initial post was longer, with examples of the kinds of situations I've seen it used, but I didn't want to post an essay for a minor observation.

I do have some sympathy, especially when an otherwise delicious-sounding dish is wrecked by some nasty substitution like soy yoghurt (tried it once, tasted strongly of paper and nothing else, and I used to eat paper so I know the taste). I'm coeliac, love meat and dairy and eggs, and often get lumped in with dairy/egg free or even vegan 😐

Soufflé (as long as its not vegan cheese!), but wish they wouldn't insist on shoving spinach in everything. Tart also sounds ok. Not a huge fan of aubergine - it's very easy to get wrong. You'll never please everyone though.

Meat free options are usually fairly uninspiring at catered events, unfortunately.

i think its becasue vegan is more a " wellness" "diet culture" thing. its become something people can sell much easier so everyhing is shoved into that group when eating out or making products. they can play much more on people vulnerabilities with vegan.

I would go with B as it's least similar to the main.

Tart and souffle are very similar to cakes. The aubergine is something a bit different so they don't feel like it's just two courses of the same.

Also, I agree with others, if it's a vegetarian option, make it vegetarian and not vegan, unless you need a vegan option. Vegetarians can't go out now without only ever eating vegan and some people do try to avoid soya for various reasons. I'm not a vegetarian (though was for 20 years), but still eat mostly plant based. I once got served breakfast on a long haul flight that was a fruit plate with a side of fruit plate. Because that was the only vegetarian thing they offered because it had to also be vegan, though I'm sure even vegans would be starving with that.

That reminds me
on a flight I was served vegan aswell ( happens loads actually )
my dh, not a vegetarian, gets chocolate and yoghurt on a flight and proper butter. I get NO chocolate or yoghurt, just fruit and margarine.

I asked if I could have them and was told “ oh but you’ve ordered vegetearian” 🤯
