Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Making my plan a bit earlier this week. Last week has been a mixed bag:

✅Saturday - pizza takeaway after rugby
✅Sunday - chicken thighs, peppers, orzo tray bake
❌Monday - 3 bean chilli. Forgot about the collection of broccoli stalks in the fridge so we had chorizo broccoli pasta.
❌Tuesday - pasta, creamy mushroom pesto. Sort of - turned this into a broccoli, spinach and gnocci pesto bake.
❌Wednesday - chicken, chorizo rice. Worked late - made baked (microwaved) potato and cheese for an ultra quick meal.
✅Thursday - veggie enchiladas. This will happen
✅Friday- ham and mushroom tagliatelle. This will happen

The week ahead is full of ifs and buts:

Saturday - going to a friend's house for dinner
Sunday - aiming for Thai-spiced roast chicken but might be subject to change depending when we leave and drive back from friends (staying overnight and not sure if they have plans for us on the sunday).
Monday - chicken and salad wraps with pourgourri (unless we didn't have chicken last night in which case we won't have the leftovers)
Tuesday - We're suckers for the M&S valentine's dine in deal
Wednesday - Chicken, chorizo rice
Thursday - veggie fajitas
Friday - Chinese restaurant for FIL's birthday.

Actually, that's a lot of chicken. I'll change wednesday's option to a chorizo, sweet potato and kale stew.

Been away skiing all week so looking forward to some routine and no raclette or pizza (never thought I’d say that)
Sunday: noodles and veg of some description
Monday: west African peanut stew
Tuesday: tex mex loaded fries
Wednesday: soup and sourdough
Thursdday: jerk tofu with rice and peas

I’ve been all over the place. I did the haloumi kebabs with cabbage salad and tzatziki and it was nice but felt a bit of a faff.

A curry with mushrooms, butternut and chickpeas with a Spice Tailor sauce was very nice.

One night was Richmond veggie sausages with homemade wedges, peas and gravy- delicious!

OH made leek and potato soup one night.

Can’t remember anything else!

Today I’m doing a veggie roast - basically everything except the meat.

This week needs to be simple because work is so busy and I’m tired. Haven’t done an order yet but it’s likely to be:
mushrooms on toast
Itsu gyoza with sesame asparagus and sugar snaps
jacket potatoes with cheese, coleslaw and salad
That’s as far as I’ve got!

Not the best week in terms of sticking to the meal plan:

• ✅ Sun: Ate out as we were out for the day
• ❌ Mon: Greens and Kimchi Rice (One Pot, Pan, Planet)
• ✅ Tue: Quorn, mushroom and emmental parcels (from the freezer) with chips and peas
• ✅ Wed: Persian Herb Frittata (Roasting Tin Book) with roasted veg
• ❌ Thu: Crispy Baked Gnocchi (Roasting Tin Book)
• ✅ Fri: Roast Aubergine with curried yoghurt (Ottolenghi) with brown rice and quinoa, poppadoms and naan – I absolutely LOVED this. My first Ottolenghi recipe and one of the nicest things I have ever eaten, especially as I’m not that keen on aubergine.
• ❌ Sat: Paneer and veg tikka masala (from the freezer) with brown rice and quinoa, poppadoms and naan

Here is the menu for this week:

Sun: Crispy Baked Gnocchi (Roasting Tin Book) with Garlic Bread
Mon: Persian Herb Frittata (Roasting Tin Book) with Roast Aubergine with Curried Yoghurt (Ottolenghi), Brown Rice and Quinoa, Poppadoms and Naan

Wed: Quorn Lasagne (from the freezer) with Garlic Bread

but someone mentioned a link to A Ladies shepherdish type pie?was it curried,maybe with spinach.i think it was a link to an article on her.the guardian? her vegetarian cookbook.onbtge same page was her tofu recipe and pear and ginger cake?

That's what has put me off previously but this recipe was from Simple and was a lot easier, and with much fewer ingredients, than his usual recipes.
