Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Last week:
Monday - veggie fajitas✅(although heavy on mushrooms and courgettes - no peppers)
Tues - going to a gig so will grab something while out ✅
Wed - soup and egg roll - sort of - was soup followed by cheese and crackers
Thurs - soup and egg roll ❌Invited over to a relative's for dinner. Leftver soup now in freezer.
Fri - baked gnocchi with roast veg ❌ Will be creamy courgette pasta

This week:
Sat - Turnips
Sun - Turnips
Mon - Turnips....

Only joking. The real plan is:

Sat - Steak and chips (relative from last night's freezer broke and started defrosting - we were given gifts of things which could be salvaged before they thawed too much, including a couple of rib-eyes!)
Sun - spaghetti carbonara
Mon - quiche, new potatoes, carrots and peas
Tues - pancakes (celebrating one week late as we were out last tuesday) (possibly a small bowl of soup beforehand)
Wed - crispy gnocchi with squash and sage
Thurs - butternut squash curry
Fri - spag bol

Half term here, so no plans. We've eaten out a lot. Back to normal next week.

I had a brilliant Gujarati food stall I used to buy it from. It closed down which was such a shame. I've not tried it from the tin yet but hope it satisfies my cravings for it!

Lots better this week in terms of sticking to the plan:

• ✅Sun: Russian Meatballs (Quorn) with Sour Cream, Rice and Tomatoes (Roasting Tin) with Garlic Bread
• ✅Mon: Leftover Russian Meatballs (Quorn) with Sour Cream, Rice and Tomatoes (Roasting Tin) with Garlic Bread
• ✅Tue: Spicy Mushroom Lasagne (Ottolenghi) – I was so disappointed with this, especially as I LOVE mushrooms. It cost a fortune, took bloody ages and was so mediocre.
• ✅Wed: Persian Herb Frittata (Roasting Tin Book) with Roast Aubergine with Curried Yoghurt (Ottolenghi), Brown Rice and Quinoa, Poppadoms and Naan
• ❌Thu: Tandoori Style Salmon (using Quorn fillets instead) and Spiced Sweet Potatoes (Quick Roasting Tin)
• ✅Fri: Roasted Paneer Aloo Gobi (East – Meera Sodha) with Brown Rice and Quinoa, Poppadoms and Naan – This was really tasty and so easy, I will definitely be making this again.
• ✅Sat: Quorn (something from the freezer), potatoes and veg

Here is the menu for this week:

Sun: Tandoori Style Salmon (using Quorn fillets instead) and Spiced Sweet Potatoes (Quick Roasting Tin)
Mon: Breakfast Quesadilla (Mumsnet Cook Book)
Tue: Sticky Rice with Broccoli, Squash, Chilli and Ginger (Green Roasting Tin Book)
Wed: Eating out as I am working away
Thu: Carrot Tarte Tatin (Green Roasting Tin) with New Potatoes and Green Beans
Fri: Cauliflower and Paneer Tikka Masala (Jamie Oliver Veg) with Brown Rice and Quinoa, Poppadoms and Naan
Sat: Pasta Bake (from the freezer) with Garlic Bread

What goes into the Mumsnet breakfast quesadillas Mama?

Serves 2 adults (not in my house! I'm doubling up 😊)

1 sausage (I'm using Quorn sausages)
2 eggs
Salt and pepper
1 tsp unsalted butter
2 flour tortillas
250g cheese (strong Cheddar is good)
grated 4 spring onions
sliced 1 tomato
finely chopped Guacamole or sour cream, to serve

  1. Grill the sausage until it is browned all over, then slice it.
  1. Make scrambled eggs: in a small bowl, lightly beat the eggs with some salt and pepper, and melt the butter in a small saucepan over a medium heat. Add the eggs and stir with a wooden spoon – being sure to go right into the corners of the pan – until just set, with no runny egg. Make sure you don’t overcook them, as they will continue to cook in the next stage.
  1. Place a large, dry frying pan over a medium heat and add a tortilla. Sprinkle over the cheese, add the scrambled eggs and finally the sausage. Once the cheese has started to melt, add the spring onions and tomato.
  1. Top with the other tortilla and put a large plate over the frying pan. Wearing oven gloves and holding on to both plate and pan firmly, invert the whole lot (be very careful of your hands and arms, in case of splashing hot oil and/or cheese). The tortilla will land on the plate. Put the pan back over the heat and slide back the tortilla, uncooked-side down.
  1. Once cooked, the quesadilla will look lightly browned and the cheese will have melted. Remove it from the pan and cut into wedges. Season to taste and eat with guacamole or sour cream on the side.

I have Covid (again) so it's fallen apart. Still haven't done the spanakopita or the tart and the salad is probably dying in the fridge. Sigh.
I have what I think is a single large pork escalope. Any recommendations?

For this week I have planned
Sun - Roasted chicken with clementines blood oranges, fennel (ottolenghi)with roasted potatoes
Mon -Any left over chicken flaked through some bulghur and with chicory, stilton and walnut salad
Veg box gets delivered on Tuesday so am planning but may have to switch around
Tuesday - lamb legs steaks, chard, borlotti, mint sauce (riverford
Wednesday -mushroom bourginon with mash (bbc) or potato and mushroom stew with keffir dumplings (Olia Hercules) -
Thursday - courgette and sweetcorn tacos (Thomasina Miers)
Friday - fennel, anchovy pasta (Rachel Roddy)
Saturday - rabo de toro (Brindisa)with chips or sauteed potatoes
Sunday - left over oxtail done with something!

Sunday roast in pub today, we’ve been away this weekend so pub lunch yesterday too.

Groceries being delivered on Wednesday, no money until then, so it’s cupboard/freezer raid meals until then.

@RemusLupinsBiggestGroupie - they are the most made thing I've done from that book! Keep meaning to make the tlayudas - I love the YT video of her at the tlayuda stall after a night out! I think they do need to be cooked on hot coals for maximum impact so may wait for bbq season...

We mostly stuck to last week except not doing chick 'n'jar sauce dinner. BecUse the sheep pie was big enough to do 2 nights.

And I did the tarragon chicken tonight instead of Friday.

Tomorrow will be a chick pie with leftover chick and gravy, and pastry.

Tuesday: prawn stir fry (frozen prawns)
Wednesday: mussels and white wine/cream sauce with pasta
Thursday: lamb chops, potato croquettes, med veg
Fri: probably actually a takeaway as we've been pretty good for a few weeks

Wildly behind, but checking in! I've done ok on planning- food waste has just been some veg which has been composted (it got soaked in a fridge leak which I didn't notice, and turned to mouldy mush!)

This week:
Sat - coming back from Mums, so planned takeaway - had a kebab.
Sun - planned chicken thighs, ended up going out to catch up with some friends. Had a delicious Indian meal instead!
Mon - having last night's chicken. With jerusalem artichoke mash, some carrots. Fish cakes have fitted in the freezer.
Tues - bean burgers (home made as trying out a new recipe!) with some salad, pickled red onion slices, feta and burger sauce! Might do some homemade wedges.
Weds - at a gig, going for some Lebanese first.
Thurs - turkey and mushroom stew - uses condensed mushroom soup, dead easy
Fri - chilli, made in advance

Got some random pak choi and mash to use up, so they may become lunches this week....

  • smoked salmon, cream cheese and peas pasta
  • thai fishcakes, pak choi, mash, parsely sauce
  • stuffed pasta, tom sauce and garlic bread

We are mostly stocking to this weeek's except DH didn't want to figure out the pre-cooked mussels, so did ham-filled ravioli type things with a tom and chilli sauce instead. I'll do the mussels either Friday or Sunday.

DH has bought "nice steak" for Saturday.

Next week, I'm away 1 night and very late another so DH will be fending entirely for himself. I have restocked my cheese rare bits (great option for solo or 2 person supper with part baked French stick). So 1 of those may disappear.

Also got flatbreads to use up the last few lamb koftas - might be a lunch at the weekend.
