Tomorrow: stuffed summer squash
Wednesday: raw veg Thai salad
Thursday: baked lentils and leeks
Friday: picking up DS from summer camp so hoping to convince him to have something other than usual Friday night pizza as he’ll probably have had that all week. Might take him out if he’s not too tired

I am soooo not interested again. So haven't done any proper planning but do have vague ideas to do something with halloumi, fajitas and spaghetti bolognaise this week.

The only even slightly interesting thing is that I'm FINALLY going to try make Vietnamese Summer Rolls tomorrow for after DS' activity.

@lastqueenofscotland it’s from the Green Roasting Tin book (I sub with plant based sour cream and stir through chopped capers to get the tanginess of the feta)

@Kobanidaughters - what feta do you use? I have yet to find a feta that is creamy and salty and tangy vs somewhat sour in England with the exception of large chunks of delicious but insanely priced feta I can buy at our local food market. I quite like the Apetina cubes for salads etc - they're crumbly rather than creamy but don't leave any sourness.

I used to love baked/fried feta with a big salad as a summer lunch but haven't in years because I don't like the feta. So suggestions welcome.

Next few days for us is:

Today:Salmon parcels with veg and new potatoes
Wednesday: Pasta arrabbiata with aubergine
Thursday: family eat out and I'm planning to start 5:2!
Friday: Chorizo and pepper fajitas
Saturday: spaghetti and meatballs
Sunday: we're at a bbq
Monday: Stir fry and noodles

@SpaceOp. Not sure where you are located, but I live in a neighbourhood close to many Middle Eastern grocery stores and they have barrels of different kinds of feta. I did not even know that there were different sorts, but the helpful owner explained the differences to me. Some were very exorbitant, but others were cheaper (and more tasty) than supermarket alternatives.

So jealous. I don't know of any such stores around here but perhaps I need to a little searching. W're in Surrey so it is likely that there are places like this in London that I could try out while I'm there.

The greek stall in our market town is great, but the feta is SOOOO expensive (and comes in chunks although I bet she would give it to me in slabs if I asked). I buy it occasionally but almost pass out every time. Last time I got some feta and a few dolmades and I paid something crazy like £17!!!!! Can't be doing that too often.

DD does have a greek friend in her class at school, I'll have to ask her mum if she knows anywhere. But I do know that her mum also shops at the same market stall as me (with the same shock re the prices), so I'm not hugely optimistic! Grin

Staying near Cromer so hope to pick up some crab to make a simple crab and chilli linguine
Wood fired pizza from nearby farm

Oh I love camping food!! We did a 10day Campervan trip last summer and I really enjoyed planning and cooking the dinners

Am staying with my parents for the next 10days - no meal planning round here so just place marking and following
