@TheMethodicalMeerkat I still have smoked haddock in the freezer I bought to do a risotto with but I couldn't quite bring myself to. You are reassuring me. Also, love your aubergine, goats cheese and honey flat bread - how do you cook the aubergine? I am going to think about a version of that or possibly do it with my halloumi and asparagus!

@Triffid1 I usually spread a little oil on each side and grill it rather than frying which I find slurps up too much oil. Probably need to be careful not to overcook before adding to the flatbreads.

I do love a smoked haddock risotto but the pasta bake is just so much easier and I must say it was very tasty with some steamed broccoli on the side to cut through the richness Smile.

Tonight was a Higgidy cauliflower cheese tart with baked spuds and salad.

Last night was a veggie curry with bhel and coconut chutney.

Tomorrow is quesadillas stuffed with cheese, black beans, red onion and red pepper, served with guacamole.

Beyond that, no idea.

Sun - nut roast en croute, cabbage and maple roasted carrots
Mon - veggie goulash and dumplings
Tue - sausages, bubble and squeak
Wed - sesame tofu noodles
Thur - Quorn enchiladas and sweetcorn salsa
Fri - green Thai curry and Jasmine rice

Sicilian sardine pasta with lemon and Parmesan breadcrumbs
Harissa salmon with roasted broccoli, puy lentils and tahini yoghurt dressing
Creamy chicken thighs with butter beans and leeks
Dhal, aloo gobi, chapati, raita, kachumber salad

Tonight I’m doing salmon with roast veg. Then we’re away for a family wedding so no cooking for a couple of days.

Sat - chicken jalfrezi, sag aloo, cauliflower pakora
Sun - at a wedding!
Mon - roast chicken
Tue - pasta with slow cooked tomato sauce
Wed - chicken and preserved lemon tagine

Tonight - steak, air fryer potato wedges, peas with leeks & bacon and cooked fresh tomatoes

Tomorrow - probably a takeaway curry

Sunday - roast beef, Yorkshires, roast potatoes, veg

Monday - using up pulled pork (from freezer, I always make double) with rolls, sweet potato fries, corn on the cob and coleslaw

Tuesday - meat balls on tomato sauce with pasta and salad

Wednesday - salmon, new potatoes and salad (or broccoli if we don't eat I with other meals before then)

Thursday is my food shop day so not got that far yet!

Tomorrow: picnic brunch as main meal: tofu scramble, salad, crusty bread, dukkah
Sunday: mushroom risotto
Monday: some kind of southern sausage stew
Tuesday: tofish and chips

Tonight we had cauli broccoli macaroni cheese with garlic bread. Pure comfort food.

Sat: Cheesy bean burgers, wedges, salad
Sun: Marmalade haddock tray bake. I’m slightly Hmm but it’s DS choice and I don’t want to discourage the enthusiasm. Especially as he’s seemingly determined to make it for us! (He’s not quite 10 so I’ll be ‘helping’ quite a bit)
Mon: Roast veg quiche with potato salad, Greek salad
Tues: Salmon, roast veg & couscous
Wed: Halloumi & bean stew with crusty bread
Thurs: Lentil mushroom walnut bolognese.
Fri: Fish tacos, spicy slaw, rice & bean salad

Just me and DD this week so going to try more adventurous veggie stuff than just quorn something

I am making pitta bread in which to wrap our tikka cauli and mint raita tonight

Leftover pitta will be used with falafel tmrw

Picnic on Monday

Something billed by the Tilda website as Moroccan veg pilaf

Good old standby of pasta pomodoro

After a weekend of takeaways and meals out, I'm looking forward to actual home cooked meals again!

Tonight: Halloumi fajitas
Wednesday: cheat paella (using normal rice with chicken, peppers and chorizo stirred through at end basically).
Thursday: kids eating out so not sure for DH and me. Probably a veg curry of some sort
Friday: We're away
Saturday: meatballs

Today: Fried halloumi, beetroot & walnut salad
Tuesday: Seafood linguine
Wed: black bean, cashew and quinoa stew
Thurs: Roast veg & goat’s cheese tart, various salads
Fri: I’m finally meeting up with friends for “outdoor dining” (cos I’m in Ireland and restaurants etc not yet allowed to open for indoor eating). Fingers crossed for good weather and DH and the DC can look after themselves Grin!

@lexloofah The marmalade haddock was a lot nicer than I expected! It’s the Nadiya Hussain one here We used fresh instead of tinned baby potatoes and added plenty of veg, it was certainly a hit with the dc.

This week for us will be

Hassleback chicken, pasta, broad beans
Veg chilli, cauli rice and usual toppings
Chicken shawarma skewers on bbq with pitta and crunchy salad
No knead pizza on Friday night

And about a million punnets of strawberries, I seem to be buying them every day walking past the grocers, cannot resist
