The Veg Box Menu Planning Thread

Combination of being nosey and wanting to skim ideas off other people...

What are you getting in your veg box this week, and what are you planning on doing with it?

This week we got:
Carrots
French beans
Romanesco cauliflower
Curly kale
Mixed salad leaves
Sweet mixed peppers

And we are having:
M: Cauliflower Cheese
T: Chef Salad
W: Harissa cabbage and white bean stew
T: Tofu Stir fry
F: Roasted Veg and puy lentil medley
S: (staying and DM's)
S: Carrot soup with homemade cheese scones

I think it probably would. Maybe baking them in thinnish half moon slices for a bit then frying with the garlic, as otherwise they may go too oily. I think something like courgette or maybe roasted squash would do also.

I really wish I liked mushrooms... it would make being veggie so much easier!

They are the only veg I really dislike

finally decided,
Yesterday I was being lazy so we just had boiled eggs and some veg smothered in sage butter

M Soft boiled eggs, spring greens and leeks with sage butter
T Veggie stir fry with sweet chilli fennel
W Courgette and parmesan bake
T Japanese noodle soup
F Palak Anda Curry
S Lemon roasted carrots and puy lentil bake
S French onion soup

Onions
Leeks
Beetroot
Cauliflower
Swiss chard
Pepper
Butternut squash

Hassle back squash and red pepper salsa
Beetroot pancakes horseradish creamed swiss chard followed by sweet pancakes
Cauliflower Rarebit and salad

Homemade pasta with creamy leek sauce

Calabrese broccoli
True spinach

Courgettes
Cherry tomatoes

M - veggie sausages, roasted fennel, cabbage
T - Thai green curry
W - broccoli spinach and feta frittata
T - mexican mole with quorn chicken
F - my birthday! (cake hopefully)
S - out
S - roast dinner

hairspraybabe can I get your lemon carrots and lentil bake recipe?

I just made it up with stuff we had in one day

1 tin of green lentils drained
1 onion chopped finely
2 large carrots chopped roughly
zest of 2 lemons juice of 1
few tbsp olive oil
chopped chilli (optional)
tsp smoked paprika
salt and pepper

mix everything together in lidded (can use foil cover) casserole dish and bake covered for 25mins at 200c - turn heat to 180 and bake for another 15 mins lid off.

I serve with either just a bit of salad or sometimes some halloumi as well!
