Combination of being nosey and wanting to skim ideas off other people...

What are you getting in your veg box this week, and what are you planning on doing with it?

This week we got:
Carrots
French beans
Romanesco cauliflower
Curly kale
Mixed salad leaves
Sweet mixed peppers

And we are having:
M: Cauliflower Cheese
T: Chef Salad
W: Harissa cabbage and white bean stew
T: Tofu Stir fry
F: Roasted Veg and puy lentil medley
S: (staying and DM's)
S: Carrot soup with homemade cheese scones

This fortnights box:

Globe artichokes
Potatoes
Carrots
Parsnip
Broccoli
Tomatoes
Onion
A variety of kale.

Menu:

Haloumi kebabs with red onion side salad ( thanks kateandme!)
Kale and cacao smoothie
Artichoke with miso butter
sheperdless pie ( lentil and carrot with potato and parsnip top)
Spicy parsnip fries
Chicken broccoli and mushroom pasta bake
Kale crisps!

Overloaded with pumpkins and squashes atm so I made some "Pumpkin bread" couldn't find a recipe that I liked so I took a banana bread recipe and swapped the banana for the same weight of cooked squash. Worked like a dream, and I think I am going to try it with a few other veg if we have a glut in the future.

watching for inspiration as i've signed up for a weekly fruit and veg box. I Used to get one years back, but we had so many after school and evening activities that I found I didn't have time during the week to experiment with much (our box comes on a Tuesday) and by the weekend, some of the fruit and veg was getting past it.

But, there's only one DC at home now, with far fewer activities to be taken to and from, and I'm only working very part-time atm, so should be able to be more adventurous. Have a couple of health issues which seem like they might be helped by going organic and veggie, so it's worth a try. Dh will eat whatever I put in front of him, DD is a lot more picky (but needs more fruit and veg in her diet), so we'll see how it goes Smile

was verry busy all weekend and havent done a plan yet,
but this week we got

leeks
black kale
onions
carrots
peppers
salad leaves
savoy cabbage
cauliflower
celery

and we still have various squash and pumpkins hanging about!

I've pushed my box delivery back a week as I'm away this weekend. So I'll be having whatever the vegetarian option is available - expect me to have had enough macaroni cheese and mushroom risoto for life when I get home....

Today I'm having leek and potato soup (from the freezer) for lunch, and will finish off my kale and mushrooms tonight in a fritatta.

Lovely thread. We have fortnightly box from local greengrocer so it's a mixture of local/organic/nonorganic/random imports.

After busy week I had this left in fridge at weekend:

Butternut squash
Cauliflower
1 sweet potatoe
1parsnip
Swede
1 1/2 courgettes
Bag tomatoes
Cabbage
Sad looking peppers

Cooked onto this

Squash lentil and chickpea Dahl (normally add spinach when we have it)

Sweet potatoe, parsnip and swede mash
Roast cauliflower
Served with meat sausages and/or veggie haggis

Courgette, tomatoes, sweetcorn and Feta frittata
Cabbage and pepper coleslaw

Do you make or buy your veggie haggis? if you buy it where from if you make it what is the recipe!

We used a kombucha squash for the salad last night, I think it is my favorite of the ones we have tried so far this year, the flesh is soft and sweet and nutty, almost chestnut like in texture!

Veg curry and cauli rice
Veggie sausages leek fennel and parsnips bake and cabbage
Pumpkin rosti poached egg and spinach
Home made fishcakes squash wedges and cabbage
Veggie bolognese with spaghetti squash
Saturday we are out with family
Vegetable stew and dumplings

Hairspray I buy Macsween veggie haggis from sainsburys or waitrose but other supermarkets may sell it too. It's not too processed and easy.

hairspray I had to googles what they were.never heard of them.cant say they look delightful though.if I was a veg box picker I think id be wary of adding something like this.a bit too out there.

They were offering them to add to the box for free as a trail this week so I haven't lost anything.

They are so bitter, I can't think how you would go about preparing them to make them taste nice!

I still have stuff from last week's box to use up (got the large one last wee, but only a medium this week), so tonight is Jamie's braised cabbage with leeks, am adding cashew nuts for some protein.

Need to decide what to do with five beetroots - DD wants me to pickle them, but I think even she would struggle to eat that much. Have had beetroot hummus before and wasn't a massive fan. kateandme - how did you do your roasted onions, sweet potato and beetroot - just chop it all up , drizzle with oil and roast?

I thought they would be a bit like celery too but they have a really bitter aftertaste, and I like celery and radicchio etc. so not averse to bitter veg.

For beets I tend to roast mine whole in the skins and then slice them very thin for a goats cheese tart. if I have left overs I blend and freeze in ice cube trays and add to pancakes, hummus, other dips and baked goods.

You can use the puree weight for weight in place of banana in banana bread and other recipes like that!

myvisionscomefromsoup yes just chop into random chunks. lay onto a baking tray,season and drizzle over oil.roast like you would roast potatos.so so good.

weve also had lovely beetroot and potatos rosit with smoked salmon and egg on top!
or into a coleslaw
another is orange and thyme roast beetroot and carrot.
oar boil the carrots and beetroot separately.lay them in tray with drizzle of oil juice of an orange 2 tblspoons of balsamic vinegarand about a tbspoon of honey.toss together.lay some sprigs of thyme on top cook for 20 mins approx.

Sorry, I think my last post didn't make sense! I do make my own rosti, we had pumpkin ones with poached eggs last night.

I meant put in my xmas veg box order it is quite a lot more than I am used to!

Little bit boring this week, and I'm out of ideas for the turnip!

Stirfry with mushrooms, carrots and green onions
Bean burger with parsnip fries
Cauliflower steak with hasselback carrots
Kale and apple salad with walnuts
Shepherdess pie with potato and parsnip (and possibly turnip) topping
Keralan veggie curry (JO 15 minute meal)
Vegetable biriani
Minestrone soup to finish off any wilting remains

I want to make Quinoa nori rolls with avocado cream (Deliciously Ella) this weekend, but it doesnt use much of the box, apart from a carrot.
