Combination of being nosey and wanting to skim ideas off other people...

What are you getting in your veg box this week, and what are you planning on doing with it?

This week we got:
Carrots
French beans
Romanesco cauliflower
Curly kale
Mixed salad leaves
Sweet mixed peppers

And we are having:
M: Cauliflower Cheese
T: Chef Salad
W: Harissa cabbage and white bean stew
T: Tofu Stir fry
F: Roasted Veg and puy lentil medley
S: (staying and DM's)
S: Carrot soup with homemade cheese scones

Happy Veg box day,
have been crazy busy the last week so not got much any plans for the following:

Onions UK
Parsnips UK
Savoy cabbage UK
Batavia lettuce FR
Courgettes IT
Red pepper ES
Yellow pepper ES

Ideally going for quick and light as the onslaught of food come at us next week!

This months box:

Onions, potatoes, carrots, patsnips
Cabbage
Cauliflower
Sprouts - yay!
Leeks
Parsley

Menus:

Friday- baked potatoes with cheesy leek and mushroom filling, tomato and cucumber salad
Saturday: chateaubriand ( dh Christmas treat) with mash, cauliflower cheese, and buttered parsley carrots
Sunday: fishcakes with sautéed cabbage
Monday: beef Wellington, roast parsnips, sprouts w chestnut and button mushrooms
Tues: prawn biryanis with leftover veg in the curry
Wed: chicken thigh paprikash potatoes

Getting my first box of 2018 today, will be really nice to get back to some form of normality! I am sick of eating such rich food so we will be having some lighter meals next week I expect!

Today- mushroom, thyme pasta bake
Tomorrow- bns rostis with an egg
Wednesday- maple roast parsnip soup
Thursday- kale, chorizo and almond stir fry
Friday- I'll make slow roast red peppers and spread that onto pizzas with cheese

and happy veg box day!
Cash is a little tight this month so will be adopting a frugal attitude towards cooking until payday. Fortunately I have good food stocks in anyway.

This week we are getting:
Carrots
Onions
Leeks
Savoy cabbage
Courgettes
Romano pepper

We also got mushrooms but I don't like them so they will end up in DPs lunches!

Oh dear. Kale again. And sprouts. DH will eat kale if chopped fine but I've lost inspiration after having it for several weeks in a row. Nobody but me will eat sprouts.

Hmmm actually we may have a lamb dish thing in the freezer so if I get my act together we can have that with the kale the day it arrives and get rid of it it won't go yellow.

Do people in your house like coleslaw drspouse of so you can shred the sprouts and use them instead of cabbage in home made coleslaw.

I like kale, wilted with a fried egg and some crispy spicy potatoes.

or you can blanch it and add it to smoothies?

They might just about cope with sprout coleslaw, kale needs to be VERY finely chopped for anyone to eat it and I can just see the reaction to that smoothie (we don't really drink them anyway).

Sorry drspouse I forget that I am a leaf loving weirdo, I love green veg and could happily chomp on it all day!

Kale in a soup? or baked crisp like chinese seaweed?

I second kale crisps! Plus you can pull it into pieces and freeze, ready to add a small handful to soups and smoothies.

We are down to a box a month now, any more and we waste too much.

Friday-haggis neeps and tatties
Saturday- portobello mushrooms stuffed with leftover haggis and pine nuts
Sun-eggs florentine brunch, out for dinner for dads 80th
Mon-leek omelette ( low cal)
Tues-baked potatoes
Wed-Nigel skaters beetroot goats cheese Rosti
Thurs-French onion soup

I'll take carrot sticks to work for lunch, with beetroot humous, or I might make some carrot lentil soup.

Got swede instead of parsnips and had a Kale caesar salad out at the weekend and it was so nice I am going to recreate it on Friday when DP is out.

We're getting sprouts (AGAIN) and kale (AGAIN), we had the kale as a side dish this week sauteed with garlic and DH ate that happily so I'll do that again for meals we're eating together without the DCs.
We did the coleslaw too and everyone ate it could be due to the large quantities of sugar I put in the dressing but I think this week I'll slice them finely and saute with bacon and walnuts and DD and I will eat them since nobody else likes them. Or possibly colcannon.

We've got a few recipe box meals and some use-up-the-freezer stuff planned so I think we'll have:
Thurs - pork chops and we'll have kale as a side dish
Fri - we're having black bean soup with ham/rice/trimmings (but I think DD and I will have sprouts and baked potatoes for lunch)
Sat - animal pasta soup that carrots and onions can go in
Sun - probably sausages, potatoes, and leeks or kale or else colcannon with sprouts instead of cabbage.
Mon - pork steaks with leeks
Tues - a veggie hot pot if I can persuade DH to make it (he's not great with new recipes)
Weds - stir fry, I will add extra kale or leeks if we have them left over!

That leaves a cauliflower and some tomatoes, the tomatoes will go in everyone's lunch and we'll have mac+cauli+cheese next week one day (we only get the boxes fortnightly).

I have started shredding the kale really really finely and adding a handful to general salads, if you use dressing then it just blends in with the rest of the leaves. Works fine on DP who is a famous non salad fan.

Glad to hear the coleslaw worked for you! I have only got sprouts once this winter Sad I love them!

Could you blend them into a veggie soup if you are really struggling?

We do eat soup but I don't really have time to make it as well as cook main meals (it's usually a quick lunch panic meal from the cupboard).
DH did spot the sprouts in the coleslaw (DS didn't!) but ate it anyway.

did no planning this weekend as it was SILs 18th but off to make a menu now!

I don't get a veg box so sadly cannot properly join your lovely thread, but just wanted to say that HFW has a fab kale recipe in Veg Everday - mushroom and kale lasagne. If it had fewer calories I could live off it, it's really good.
