Spinach and ricotta pasta pockets, fry sage in butter and pour on top.

My sisters favourite pasta of all time is:

  • cook spaghetti
  • drain
  • add two tablespoons of mayonnaise
  • add chopped smoked salmon
  • add twist of black pepper
  • mix and serve

I tell her it doesn't count as cooking Grin

Pasta is the one thing I really miss when doing a low carb diet.
It's so fast and versatile.
My DC absolutely love...
Mushroom pasta (fried up with garlic, add soured cream or creme fraiche, mix with cooked pasta and sprinkle Parmesan on top),
Carbonara (fry garlic and pancetta, mix and egg per person with a mixture of Parmesan and cheddar, toss everything together with the cooked pasta),
Salmon pasta (bake salmon fillets in the oven with butter and garlic, cook pasta and when drained, add some of the garlic butter and mix together. Top pasta with fillets and squeeze some lemon over the top),
Anchovy pasta (loads of olive oil, add chopped anchovies and garlic and chilli flakes, mix with cooked pasta).
Loads more too, bloody love pasta!
My neighbour refers to this house as the Pasta Palace Grin

fry bacon or pancetta strips with huge amounts of garlic in olive oil. Stir into cooked pasta. Mix and add a huge amount of cayenne pepper. Yum!

My last two were proper Italian so I can add one of my personal favourites- pasta, butter, grated cheese, tomato ketchup and black pepper- an feel reasonably safe from a thunderbolt from beyond the grave from Nonno.............

In a roasting tray put cherry tomatoes, chunky chopped red and orange peppers, chunks of courgette, whole cloves of garlic, olive oil and any fresh herbs you have. Cook in the oven for 40 mins or so, cook pasta (any type) when the tray stuff is cooked put the drained pasta in and mix it all up (squish the garlic cloves) with a bit more olive oil if needed. Delicious.

Fry up some spring onions, king prawns and garlic in a good glug of olive oil. Chuck some cherry tomatoes in and let simmer while tagliatelle cooks. Stir together and eat. Dead simple, dead quick and dead tasty! It's replaced my super quick pad thai since I developed an egg allergy!

Cook spaghetti, drain, bit of oil in the pan and heat up a crushed garlic clove, add big spoonful of philadelphia, some grated cheese, dump spaghetti back in and stir over a very low heat for a minute til philly and cheese melt and crack in an egg. Couple more minutes stir, probably with the heat off, and serve. Extract garlic clove and eat before children revolt. Eggy spaghetti.

Mine is pretty much the same as one up thread.
Pancetta or streaky bacon pan fried with garlic and a pinch of red pepper flakes in plenty of olive oil add some of the starchy water from the pasta and then Parmesan... Yum!

Cook pasta
Add frozen peas and sweet corn to cooking pasta
Drain the majority of water but not all away.
Add Philidelphia/Boursin or the like
Mix with tinned tuna/salmon/other tinned fish.
Add pesto if you like it

Jamie Oliver's recipe
Which I love and could eat for dinner every night. Fry some garlic, add raw prawns and fry for a couple of mins, add 1 glass of wine, half a jar of sun dried tomato paste, rind and juice of a lemon, chilli flakes and some chopped rocket. Add al dente spaghetti.....mmmmmmmmm

Was made this pasta sauce in Sicily by the mother of a friend - it's the real deal and makes a nice change from all the tomato based sauces that all get a bit same-y.

4/5 courgettes finely grated and cooked down in a pan with fresh garlic, a squeeze of fresh lemon and a few mint leaves. Finish with a big spoon of single cream and lots black pepper.

It's sooooo good

Put spaghetti on to boil. Cook one of those shop bought vacuum packs of mussels in white wine and garlic sauce as per instructions. Add to cooked spaghetti. Serve with fresh parsley, twist of black pepper and cold glass of Pinot Grigio.

Fry shallots and garlic, add sliced courgettes and mushroom. Cook through then add a tin of tomatoes and a spoon of mustard. Stir through cooked pasta, add grated cheese and grill for a few mins.

Fry chorizo and cherry tomatoes in a little olive oil and balsamic vinegar. Stir through cooked pasta (penne or spaghetti work well or any tortellini) including some of the oil - delish!

Old student one - fry chopped bacon, tomatoes and add a beef oxo. Stir through cooked pasta. We used to add a Kraft cheese slice on top - sounds awful but was nice in those days !

Tendersteam broccoli, prawns, chilli, garlic ages creme freche, stir through spaghetti and add some strong cheddar on top.
I've had it for my tea tonight and it was lovely

Slice a fennel into wedges , add to pan with knob of butter then cover in milk. Simmer until soft, stir in cream and Parmesan, season and mash fennel with a fork or blitz with a stick blender. Stir through pasta.

Bastardised Carluccio's one:

Fry onion, garlic and finely chopped courgette (lose the seedy insides) in olive oil. Add chopped red chilli and fry a bit more. Cook pasta. Mix with the courgette stuff and add a shedload of grated Parmesan.

Pasta, frozen peas, frozen spinach. Can all be cooked in the same pan. Add some chopped mint or parsley and some crumbled feta.
Fried red onions and tomatoes , add to cooked pasta and stir in marmite to taste.

Easiest pasta dish ever.

Put pasta on to boil.

In separate pan, at the same time as the pasta is cooking, put 1 tin chopped tomatoes, 50g crumbled feta cheese and a small tin of drained sweetcorn. Mix.

By the time the pasta is done the other ingredients will have thickened and reduced to a lovely, creamy cheese and tomato sauce.

Mix with drained pasta. Serve with cracked black pepper.

I know what I'm having for tea! Grin
