Which really healthy meals do you love?

I know there's likely to be a pile-in with people saying everything's healthy in moderation, but sometimes you make something that is so lovely and fresh and you just know it's good for you.

So mine at the moment is a bowl of chopped avocado, cherry tomatoes, garlic, red chilli, fresh coriander and the juice of a lime.

Just making it is really lovely - the smells are amazing and it takes great, too.

Butternut squash Lentil Curry. Quick and delicious. I think the hardest part is peeling the squash.

Angry, that sounds amazing. I love pulses and lentils, and they curry so well.

Would it be weird to eat stodgy, fiery, warming curry all through the summer...?

My famous salad with about a zillion ingredients is my favourite:

Raw ingredients: Spinach, rocket, cucumber, mixed colour baby tomatoes, cucumber, spring onion, grapes.

Roasted ingredients: whole roast chicken - shredded after cooking, honey roasted beetroot & cashews in the same tray as the chicken.

Fried ingredients (with 1 cal coconut oil spray): beansprouts, sugarsnaps, mange tout, possibly bacon.

Then I apply generous amounts of home made pesto and grill some goats cheese so it melts and lay that on top.

Serve sometimes with hummus/ pitta.

Probably not the healthiest salad in the world but better than a Big Mac and chips I'm sure Grin

Griddled salmon with a side of fresh mango and avocado salsa (mango, red onion, avocado, lime juice). Steamed asparagus on the side.

My version of a Cobb Salad - strips of cooked chicken, chopped up bacon, crumbled feta, choped tomatoes, chopped avocado, all laid over a bed of lettuce, and drizzled with a dressing of your choice. Very filling, despite low carb content, probably not very low calorie, but pretty healthy I reckon.

Griddled Salmon with stir-fry veg + rice or noodles. Favourite dinner of all time.

Chicken, tomato, and red/yellow pepper casserole with brown rice. An old Annabel Karmel recipe that I still cook.

No meat 'English Brekkie ' - eggs, spinach, mushrooms + garlic, roasted vine tomatoes + rye toast.

Warm mackerel & beetroot salad (BBC Good Food recipe). DH loves this one.

Pasta Pesto with Peas, Spinach (any green veg will do) & Toasted Pine Nuts. Easy store cupboard one.

Love the sound of Nigella's Vietnamese Chicken Salad, will def be making that.

That was gorgeous...and I have leftover salsa that I will have for lunch with some buffalo mozzarella tomorrow. Very healthy except for the self pitying glass of wine I enjoyed after tearing my calf today Sad

I just did a good one out of fridge leftovers!

I fried off a stick of celery, half an orange pepper, two spring onions, some mushrooms, with a squeeze of garlic paste, some fresh coriander and some Lazy Chilli.
I used olive oil.

Microwaved a pouch of quinoa and added it to the pan, stir fried it for about 30 seconds.

Stirred through half an avocado, topped with a poached egg, some more coriander and black pepper.

Absolutely gorgeous

Aubergine Dahl per JO. Looks unappetising at first as Dahl often does but so lush.
