Which really healthy meals do you love?

I know there's likely to be a pile-in with people saying everything's healthy in moderation, but sometimes you make something that is so lovely and fresh and you just know it's good for you.

So mine at the moment is a bowl of chopped avocado, cherry tomatoes, garlic, red chilli, fresh coriander and the juice of a lime.

Just making it is really lovely - the smells are amazing and it takes great, too.

Greek yoghurt with blueberries, toasted oats and honey, my fave breakfast.
Ceviche with mango salsa - DH makes this, bloody gorgeous.
Nigella's Cambodian beef salad, I do this on 5:2 days and look forward to it all day.

Anna Jones' sushi bowl is fantastic (I love it with seared tuna or a salmon steak)

Also her sweet potato and coconut dahl is amazing (again I often add some poached smoked haddock to turn it into a deeply comforting kedgeree/risotto hybrid)

Thai hot and sour soup with prawns/salmon/shredded chicken is delicious, it's thickened with egg and noodles are optional.

Poached eggs with asparagus and smoked salmon for breakfast feels indulgent but incredibly healthy.

Simple avocado on toast with a poached egg does it for me!

Beef tomatoes, sliced in half, brushed with olive oil and topped with finely chopped garlic with a drizzle of oilve oil, a basil leaf and black pepper. Roast for an hour in oven.

Transfer into serving dish, allow to cool and then pour over dressing made with olive oil and balsamic vinegar, sprinkle with black olives and fresh basil, put in fridge. Keeps a couple of days.

Yummy with focaccia. DH likes it with chicken and green salad.

Having just discovered Belazu's balsamic vinegar - absolutely any salad with it.

I'm eyeing some aubergines at the moment, and pondering them cubed roasted in a salad. Ditto a BNS. With a leedle bit of feta, seeds and plenty of leaves and fresh herbs. I'm massively stocked up on dill and tarragon atm.

Pho. I go to Vietnam every so often on business and eat it for breakfast: so refreshing and healthy. Then I make it at home regularly for dinner or super for a few weeks until everyone rebels and demands stodge:
fresh stock
garlic cloves
root ginger
chopped chilli
meat, fish, greens, whatever we have in (usually chicken, prawns, some shredded cabbage or pak choi/choi sum)
a handful of rice noodles per person.
serve as a thin soup in a big bowl each with yumminess hiding at the bottom.

I do a thing like Bombay's. Hoik chicken stock out of freezer. Defrost in pan for ease. Add handful of prawns and the contents of one of those stir fry veg packs (trays not shreddy bags). Simmer until cooked and add lime juice, fish sauce, chilli. Brown rice from microwave pouch (Uncle Ben does individual ones, no one else likes it here ) at the bottom of the bowl.

I do 5:2 and often make this for myself and DH to share for dinner on a fast day - one can of black beans (drained) mixed with 3 or 4 tablespoons of fresh salsa (not one with tomato puree/added sugar). Combine and simmer, then crack 2 eggs each into the mixture and poach in the liquid until the whites are set. Add a little grated cheese on top/some avocado or pickled jalepenos ....yum

Chinese soy marinated salmon, baked in the oven 'til it's all crispy and chucked on a plate with wild rice and tabbouleh. DS' favourite meal actually, tied first place with a chicken nugget happy meal.

Mmm, beetroot , there's another thing I should remember to have more often. I like the baby ones you can get with a hint of chilli. Good with cheeses and salad I think. I remember them for a bit but then forget them again, but perhaps they're seasonal? Or I have a bad memory!

For me, anything with some lean protein and something dark green feels good for me.

Smoked mackerel, or grilled salmon, with some beautiful cavolo nero or spring greens. And a bowl of miso, which always feels so nutritious and light, but sort of comforting too. Mmmmmmmm.

Another favourite is poached eggs, with some green veg sauted in a tiny smidge (really) of butter and some garlic. Broccoli, asparagus and some courgettes done with the peeler (into ribbons) take about 7 minutes to cook, and taste really luxurious.

Poached eggs on Wholemeal toast. Just had this for Breakfast. i have it about three times a week.
Halloumi and mushrooms done on the Forman grill on a wholemeal English Muffin. Usually have some grilled tomatoes on the side as well.

Last night's dinner was Hake, ovened with some lemon juice Spinach and a smidge of olive oil. Had a sweet potato with that, some green beans and Baby corn, simple but delicious.
