Which really healthy meals do you love?

I know there's likely to be a pile-in with people saying everything's healthy in moderation, but sometimes you make something that is so lovely and fresh and you just know it's good for you.

So mine at the moment is a bowl of chopped avocado, cherry tomatoes, garlic, red chilli, fresh coriander and the juice of a lime.

Just making it is really lovely - the smells are amazing and it takes great, too.

Make this once a week. It's a Moroccan Chick pea Sweet potato and spinach stew. Has dried Apricots in smoked Paprika , and various other spices. Really nice. We have it with Brown rice.

I LOVE: chicken breasts marinated in chilis, garlic and lime juice for a couple of days then oven baked topped with a slice of cheese and pineapple served with a sweet jacket potato and avocado and roasted veg Grin

I used to take cold grilled mackerel and salad to work. I was not popular on those days.

Chick peas with tomatoes. Finely chop and fry an onion with some cumin and mustard seeds, add tinned chickpeas and masses of chopped fresh tomatoes and warm through, eat with crusty bread. Delish :-)

Mine is definitely more virtuous than the recipe I found which had lashings of butter IJustLostTheGame . I make it by frying the onions and spices then moistening it with lots of low fat natural yogurt when I've piled in the rice and fish. It's a bit more like a smoked fish biryani than a soupy kedgeree. I use Sainsbury's Basics smoked mackerel to make it even cheaper and up the Omega oils and just one decadent soft boiled egg per person.

The house stinks after I've cooked it Wink

I like a Mediterraneanish fish stew. Fried chopped onions, fennel and tinned tomatoes, chili and water or white wine with some halved new potatoes and maybe green pepper then white fish fillets (often frozen) and seafood (squid, mussels, again frozen) put in at the end. I'd love to be able to get those frozen packs of seafood including spider crab legs that you see in Spanish supermarkets.

DD and I, for dinner last night had skinned chicken breast (1 between both of us), cut into small chunks and stir fried with red onion, garlic and chipotle paste, served on chopped avocado, chopped tomatoes, red pepper and corriander, topped with a blob of unsweetened greek yoghurt.

This is my favourite "can't be arsed cooking" meal.

I don't know if it's REALLY healthy or not, but I love a salad of sliced red peppers, rocket/spinach, chopped ripe tomatoes (I take the seeds out to avoid slime), garlic and balsamic - topped with a slice of fried goat's cheese. Think a slice of the "log" you can buy from the cheese counter, just put in a non-stick, really hot pan for a couple of minutes on each side. Melted in the middle and crispy on the sides. Delicious.

I love a soup so that chickpea and lentil one looks excellent.

Dice tomatoes, mozzarella and basil and mix through hot spaghetti.
No real cooking required.

Some lovely recipes here. I think we often think of what we can't have with food rather than focusing on food that looks and smells great and tastes delicious.

Made a great chilli in the week and served mine baked in a pepper.

Lunch this week has been tuna, tiny bit of mayo and mixed in jalapenos served in lettuce wraps with splash of pumpkin oil, avo, cherry tomatoes.

This week I made Jamie Oliver's protein loaf from his recent healthy book. I've been having it for breakfast with peanut butter and sliced banana, it's delicious.
We are also eating a lot of strawberries with Greek yoghurt in our house at the moment. Simple but so good!

Ratatouille or Briam, which is a Greek version of ratatouille. Vietnamese chicken salad. Jamaican pepperpot. All delicious.
