Which really healthy meals do you love?

I know there's likely to be a pile-in with people saying everything's healthy in moderation, but sometimes you make something that is so lovely and fresh and you just know it's good for you.

So mine at the moment is a bowl of chopped avocado, cherry tomatoes, garlic, red chilli, fresh coriander and the juice of a lime.

Just making it is really lovely - the smells are amazing and it takes great, too.

I did a mozerella and spinach pasta for myself last week not sure it was that healthy i bunged chirizo in it but was very tasy

I love this thread! My favourite healthy breakfast is poached eggs (with a bit of cayenne pepper on) on spinach with red chilli, lime & avocado maybe with some toast to soak everything up.

Just bought some cottage cheese with prawns from M&S. That's healthy, right? So yummy. Although if you drop any down you it goes not just orange but ORANGE so don't eat it wearing white.

I like these Hairy Bikers diet recipes:

Chilli & Lemon Tuna with broccoli

Sticky Chilli & Ginger salmon which I serve with steamed rice and stir fried peppers, carrot, onion, broccoli, baby corn, mange tout and pak choice

Salad wise, I do one which is dark leaves (ie spinach, rocket, watercress) topped with cucumber, tomato, thinly sliced radishes and red onion, avocado and mango, drizzled with olive oil, lime juice and black pepper.

Or

Shredded red and white cabbage, grated carrot and raw broccoli broken into tiny florets (sometimes I add red & yellow pepper strips too) with sweet onion dressing, topped with roasted salted cashews and dried cranberries. Its lovely on it's own or with cold chicken or pork if you want more protein.

Huge garden salad with a small amount if grated cheese and some houmous stirred through like dressing. I'd eat it all the time if it didn't take so long to prepare (I like my vegetables cut small).
I've also realised that although I like broccoli I love tendersten broccoli and have it with loads of stuff.

Menimen- the Turkish breakfast, but we have it any time. So so good.

Cumin roasted carrots With toasted seeds, mixed leaves and a smudge of grilled halloumi.

Seems odd to say a burger, but a burger or venison burger, or veggie burger, grilled, with slice of tomato, avocado, wrapped in lettuce leaf as opposed to a bun. Yum. And satisfies male burger desire.

Lemon baked salmon fillet, sweet potato chips cooked in garlic and rosemary, homemade guacamole with lime and coriander, salad with toasted sesame, pumpkin and pine nuts. I cook it for guests and they always love it Smile

My DD's favorite is chili, she is almost 4. Sometimes we make it vegan, sometimes we add 5% mince. It's mostly/all vegetables, but it's so delicious and DD eats it at least 2 times a week. I make a huge batch and freeze it in individual portion sizes. It doesn't even feel like a healthy meal when you are eating it, but 1 portion size is only 165 calories.

Ooh another recent find of mine since going vegan has been cauliflower rice. Literally blitz cauliflower in a food processor till its in small bits, then stir fry with whatever you fancy- I used fake beef strips as I was in a hurry, and they were vegan, and threw in some veg. Virtually no carbs too.

Marinate chicken overnight using spices. Barbecue with vegetables. Chargrilled is amazing.

For lunch, I just had cottage cheese on Chinese Leaf, radishes and celery, leftover marinated chicken chunks, amazing.

Chunky Chilli Seafood Stew! Onions, tin of toms, water, stock cube, any veg you've got lingering in the fridge, fish/prawns/seafood mix.

Overnight oats with banana.

Greek salad (eating it now).

What a lovely positive food thread. I don't really do recipes but we had a version of miso soup for lunch with some tinned spinach and an egg thrown in with some of last night's pasta and it was pretty tasty - so I'd recommend miso as a useful, healthy stand by..
Also another one voting for avocado with anything!

Some nice ones there Jemima ... but have to say I tried Skyr yogurt recently and decided I prefer the ordinary kind. DS went to a friend's house the other day and had home-made which reminded me I used to make it as a teen and was delicious. Thought I might give that another try Smile
