Maybe a bit late but followed Mrs beestons xmas cake recipe and it smells great.
Starting to feel like Christmas! 🎄

Two down, four to go. Using BBC Food Simmer and Stir cake recipe.

drinkswineoutofamug · 04/11/2017 13:52

The cakes had their first feed today. Very greedy

It's not cooked properly on the bottom 😔 I turned it over and dug a little out of the bottom it's got the texture of Christmas pudding. Still perfectly edible though and tastes nice. If I make another couple for parents I'll cook them longer.

I might also make smaller ones. But not sure on the timings in regards to the size of the tin?

GherkinSnatch · 04/11/2017 15:14

What size of tin are you using Username? My little ones are roughly 2.5-3” diameter and they took about 90 minutes at 140C

UsernameTaken2 · 04/11/2017 16:49

7 inch. The recipe did call for an 8 inch tin. The problem was the top was starting to brown too much even with a tin foil hat.

Do you think there would be a problem if when I ice the cake I cut a small lawyer off the top?

Sorry for all the questions. I'm trying to remember what I did last time I made it, but that was about 4 years ago and I'm struggling to remember

SleightOfMind · 04/11/2017 17:04

Thank you Gherkin for the Lebkuchen recipe!
I lived in Germany for part of my childhood and adored these. So Christmassy, will be trying that this year.

CoffeeMad18 · 04/11/2017 17:13

Does anyone have a recipe for a 4” square tin please? 🤞🤞
Thank you

CoffeeMad18 · 05/11/2017 07:13

Got one! Using 8” mix and it makes 4 individual 4” cakes. In case anyone needs the info.

drinkswineoutofamug · 05/11/2017 09:14

Going to make Lebkuchen today, while partner is fixing the car. I’m stiff and sore from pushing the bastard estate car through traffic lights on a gradient. He’s a poor excuse for a mechanic 😂

.

Debby08 · 07/11/2017 10:44

I haven't baked for a while now but hopefully before Yule I'd be able to find time and make one. I'll try Mrs beestons Christmas cake recipe.

goose1964 · 07/11/2017 19:38

I've made both Delia's cakes in the past and my DH prefers the Creole one.

goose1964 · 07/11/2017 19:43

A reminder to anyone making Delia's cake to turn the oven down by at least 10 degrees if using a fan oven. I usually forget and end up with a burnt crust

bookbook · 07/11/2017 19:44

Goodness , you are all ahead of me - my fruit is soaking ( but just overnight ) and will bake the cake tomorrow.
It is our family celebration cake recipe , passed down the family. I have made it for nearly 20 years, since my DM died , and am anxious every year before it comes out of the oven !

UsernameTaken2 · 10/11/2017 09:05

Made another two yesterday and put little paper hats on them from the beginning of cooking not just at the end like the previous cake. They Cooked lovely. Im actually a little jealous that I'm giving these ones away and keeping the darker slightly burnt one for myself

GherkinSnatch · 10/11/2017 09:24

That's so nice that you have a family recipe bookbook Smile

I think I'm going to give mine their first feed today - 2 weeks post-baking.

bookbook · 10/11/2017 10:46

User can you not shave the burnt ( hide behind icing , or a cake trim?) or keep one good one ?
Gherkin - yes , its a good one too , though I say it myself - I made it for my DGS christening cake , and I was asked for the recipe by a few :)
I ran out of alcohol to soak my fruit so am in a bit of a quandary about feeding - I usually use the same as the soaking liquid

XmasStartsInNovember · 10/11/2017 17:54

I feel really behind now. Fruits been soaking, and I’m cooking it tomorrow.

PerfumeIsAMessage · 11/11/2017 06:59

My cake (Delia traditional) had its first glug of whisky last Sunday. Further advice re: Delia and fan oven- mine was definitely done in a much shorter time, and on a much lower oven than she recommends. I remember my Mum doing her Christmas cakes on a gas 2 or something, so that's what I did.

drinkswineoutofamug · 19/11/2017 15:57

Made stollen today. Just waiting for it to raise. Again. Next year I may just buy it as normal.

Creamswirls · 24/12/2017 12:27

Who’s icing theirs today then? Any tips?!

StepAwayFromCake · 24/12/2017 14:27

I want a Fruit Getting Shit-Faced Jar. That is such a brilliant idea! I think I've got a couple of Kilners at the back of the understairs cupboard (from my disastrous attempt at nettle beer a few years ago). 2018 shall be the Year of the Shit-Faced Christmas Fruit Jars Grin Will definitely be better than nettle beer.

It’s a Mrs beetons

See if this works

Sorry about the biro on it, had this boom for 19 years!

I used ginger powder this year and buy a bag of mixed fruit and peel , it adds up to about 625g of fruit. Halve the cherries and break the walnuts in to big chunky bits [/quote]
@drinkswineoutofamug I just wanted to say that every year since this thread, I have made your Christmas cake recipe and it has gone down a treat Smile

I wondered if you had the front cover of the book it's from as I would love to see it?

Thank you!
