Maybe a bit late but followed Mrs beestons xmas cake recipe and it smells great.
Starting to feel like Christmas! 🎄

Did start soaking the fruit, I send the last of the cinnamon brandy we brought back from Greece years ago. The mixture really smells like Christmas. If any one fancies making their own cinnamon brandy, it's just cinnamon sticks in brandy left to infuse

Ah you used last years brandy @goose1964 ? That gives me more confidence in using my last years brandy. At least for soaking the fruit in...

Loving your work/cakes! I always make mine the weekend after Halloween. Usually a Delia recipe but I'm tempted to ring the changes and try a Mary Berry one.

I am making mine in Thursday. Fruit currently soaking in brandy. The recipe I use is my grandma's recipe which was given to her (well her mum) by an army major during the second world war. Can't wait for the smell of it baking although we moved house this year do it is the first time I have baked it in an electric oven so hope it comes out ok.

I'm doing mine next week when dd goes back to school.
before then I'll have to gut the kitchen as it's minging atm.
Cake likely to be put back until the end of next week.

I used ginger powder this year and buy a bag of mixed fruit and peel , it adds up to about 625g of fruit. Halve the cherries and break the walnuts in to big chunky bits

Has anyone got a suggestion for alternative to marzipan ... nut allergies mean marzipan is a no no ....... anyone have an alternative ?

First it’s the brandy soaked sponge fingers , then a tin of fruit, jelly, custard , whipped cream and sprinkles on top.

@drinkswineoutofamug thank you! So do you leave the cake like that and then add alcohol to it until Christmas? Or are you meant to soak the fruit for ages before you bake the cake?

Yes , I’ve got it wrapped up in tin foil in an air tight container. Each week I will give it a drink.
I didn’t soak my fruit just bunged it all in.
