My fruit is soaking as we speak :D It'll get two overnights worth before baking on Friday. The kitchen smells aaaaamazing.

I use the delia recipe with 900g of fruit and 100ml of brandy. Though I used slightly more brandy.

Seashell80 · 25/10/2017 20:21

Made mine last week! Using a good housekeeping recipe, bit simpler than some of the other ones I’ve tried but smells fabSmileused amaretto and brandy in the past but this one uses Vodka!
I think that I enjoy thinking, talking and reading about Christmas cake almost as much as making themGrin

drinkswineoutofamug · 25/10/2017 20:56

Reading that I may have to make a vodka Christmas cake!

I've made two :) I'm going to cut them into quarters for Christmas presents, I always use the Delia recipe that says don't worry if it curdles Grin

I was really organised somehow this year, made the first one about a month ago & the second one last week, I'm going to put brandy in every week or so now

Seashell80 · 25/10/2017 21:37

drinkswineoutofamug it’s this one Smile

I've just bought amaretto, brandy and port for mine. I'll pop the fruit in to soak tonight and leave it for a couple of weeks; then, sometime in november, I'll boot everyone out of the house and indulge in some christmas music while I bake Xmas Grin I make Delia's creole cake, with different alcohol and different fruit (TONNES of cherries!).

I flipping love Christmas.

GherkinSnatch · 27/10/2017 13:38

Batch 1 done, batch 2 in the oven!

Now what can I do with the rest of the candied peel and cherries so they don’t get wasted 🤔

Gherkin - either make a Christmas pudding, or I have a fabulous recipe for an Italian fruit and nut tart - lots of almonds in.

Then a cherry almond loaf cake to use up cherries, although you don’t really need to use them up as they last ages.

Taffeta · 27/10/2017 13:46

Or a seasonal rocky road/ chocolate fridge cake with mixed peel and glacé cherries would be good too.

GherkinSnatch · 27/10/2017 14:11

Ooh a seasonal rocky road could be an idea - something the kids might eat instead of Christmas cake.

They do last ages, but every year I forget I have them and every year I have to buy more because they've gone all weird from being in the cupboard for a year Blush

The cherries are easier to use because I like a cherry bundt cake (a la Bake off a few years ago)

drinkswineoutofamug · 27/10/2017 14:52

Gerkin they look grand!
I’m soaking my fruit in vodka over the week end. To make cake number 2. Then I’ve been asked to make a cake for a colleague, cake 3!

Okay so I thought I'd try my first recipe from the Jamie O Christmas book and make his Christmas cake. But the recipe states that you should let the fruit soak in stout for a few minutes. A few minutes! Surely that's not right? I've just bought all the ingredients

Creamswirls · 29/10/2017 13:57

@drinkswineoutofamug Is it definitely plain flour that you use? Don’t you want it to rise a bit? Have got all the ingredients now for Mrs Beeton but a bit nervous to start! It came to £20 in all plus booze! Shock

Doje · 29/10/2017 14:02

DH has made the cake and two Christmas puddings, and over the last week I've done two batches of sausages rolls and some mince pies for the freezer!

OhYouBadBadKitten · 29/10/2017 14:06

I’ve made mine. No nuts and no ughy candid peel in it but double the cherries. I use plain flour cos Delia says so.

GherkinSnatch · 29/10/2017 14:53

Yeah plain flour here too as per Delia. Mine certainly had no trouble rising, it doesn’t rise too much though but you don’t need it to with almost a kilo of dried fruit in it.

drinkswineoutofamug · 29/10/2017 17:34

Yes @Creamswirls , plain flour

Home from work.
Making the vodka cake tomorrow. I’m gathering from the recipe I dump all the fruit and vodka into the mixture?
Mince pies next week.

Oh God this thread has just reminded me I promised to make a xmas pudding for my mother :-o

jocktamsonsbairn · 29/10/2017 21:29

I’ve done that but it’s still very moist and sticky. Think it must be too much brandy! Recipe said bake for 2 hours at 150.

CoffeeMad18 · 30/10/2017 08:16

I’ve got 6 to make! ShockAlways do them in Oct half term. Will make them Thurs and Fri this week.
