2 hours doesn't seem like very long for a christmas cake - Delia's take 4 hours and my mini ones take an hour and 20-30 at 140.

Christmas music for you is fine as long as it's not too early for me to watch the Christmas Gavin and Stacey Xmas Grin

Don’t like the flavoured baileys . I like to make my own.

250ml double cream
Tin of condensed milk
Teaspoon of instant coffee
Teaspoon of vanillas essence
Whiskey to taste

Blend it up and pour into sterilised wine bottles. Should keep up to 2 months in the fridge 🤔

Oh to sterilise the wine bottles, wash them etc . Switch on oven to 150, put bottles in oven while cold. Once the oven hits 150 , take the bottles out. Leave to cool.

I haven't done one in the last few years but i might do a square one and cut it into four to make mini cakes for myself and family - that should work if I also marzipan and ice them shouldn't it?

I'm going to use an old good housekeeping recipe - it's called mulled wine fruitcake and it uses mulled port to soak the fruit in. Not a cheap recipe but bloody lovely! So moist and yummy and doesn't need feeding.

Did mine last Thursday, they look fine. Will take a pic for you lot next time I give them a drink!

Will have to get some Glenfiddich as this is what I've used the last few times and it's always been good.

Used dried cranberries, figs, raisins, currants and cherries as the fruit.

Fancy that lebuckhen, I've à tin of treacle in the cupboard.

I’m not skilled enough to make a cake but I’ve bought an amazing one that a friend made at a harvest home Grin how do I go about storing it? It’s currently just wrapped in cling film and in the cupboard. Also when do I decorate it? Just a few days before Christmas? Thanks

I've got my fruit soaking in sherry, I'm following the "as you like it Christmas cake " recipe from the bbc good food site. I think this is the recipe I followed a couple of years ago and it turned out well, but I've already ballsed it up. The recipe says to soak the fruit overnight in your choice of alcohol with the juice of 2 lemons and 2 oranges. I've only gone and Forgot the bloody lemons and oranges haven't I?

Username my recipe asks for the zest and juice of an orange and I always forget it too.** If I remember I add it when mixing the cake but it tastes fine without I usually add extra booze to compensate

I’m making a tropical Christmas cake this year - it has dried mango in it? It was in the last Good Housekeeping magazine. The fruit is currently soaking in the conservatory and I’m quite excited about it.

I had to go out today so wasn't able to bake the cake, but on my travels I bought the fruit and have now added the fruit juice to the (very) alcoholic fruit, it seems a little too wet but I reckon that'll be alright.
I'm trying to work out if I want to make two more? One for each set of parents but I only have one cake tin. I might scurry off to the shop and buy another tin tomorrow

I finally baked my cake today. I use Dan Lepard's Dundee cake, with loads of different fruits and without the nuts on top.

The fruit has been soaking in rum since before the weekend! Life just keeps getting in the way. But when the dc were all at school, and I finally started mixing the ingredients, I discovered that they'd used up all the butter and marmalade! So I used mayonnaise and black cherry jam instead Grin

I'll feed it every week or so until I ice it the week before Xmas.

One year, when dh suddenly changed his mind a few days before Xmas and decided that he did want a cake after all, I baked Delia's cake using the same weight of mincemeat instead of all the dried fruit. It was excellent, even without being fed.

It’ll be fine without the lemon and orange zest :) you could always add the zest to the cake mix before you bake it. It sounds like quite a lot of zest so there’ll still be a citrusy flavour. And by the time you feed the cake it’ll be plenty boozy enough.

Well I made the ginger bread men and daughter has made 2 batches of mince pies. One cinnamon the other vanilla.
Had to buy more brandy for the cake as I drank it all. Blush

God, I now have Xmas cake anxiety. I usually make Delia's classic one but I've just looked at the Creole recipe and that looks good too. Decisions, decisions - argh!
