What we cooking this week BMN?

Hey folks. After the heat wave last week, I’m a bit lost for ideas. Thankfully it’s cooling down now this week but my brain isn’t ready yet. To top it off, we just moved house and fridge/cupboard is a bit bare.

I pulled out a package of skin on bone chicken thighs from the freezer and I’m about to jerk them overnight :)

I’ll roast them tomorrow evening when it’s cooler but still a bit stumped for other food this week though. This afternoon I made a vegetable couscous salad but Mr. Jings and I plowed through with gusto.

Anyway, what are y’all cooking this week? What are you eating cold as a full meal, etc?

Oh my @JingsMahBucket that all sounds so tasty. So happy for you that you’re in NYC. Have a wonderful time with your loved ones.

As well as the gingerbread house ( and sugar scaffolding!) I’m also making jam tarts, coconut tarts and Greek honey cookies.

The last two stem from my childhood when dm would make coconut tarts and the honey cookies would be made at school on base by one of the helpers/ volunteers. I’ll add the recipes I use.

Lambshanks, mac&cheese, swedish meatballs, roadt sweet potato and yep another pineapple upside down cake here. Added rum and coconut this time. Was amazing. Hope everyone is well❤️

Oh my @Lndnmummy that all sounds delicious. Got to add the rum at Christmas!

I’m pleased to report that the gingerbread house was a success and has enough sugar frosting to keep it upright even though it’s down to three walls and half a roof!

Reviving this thread.
I love cooking but due to work, school, clubs etc weekends are when I have the most energy to cook.
Today we will have a fry up which will probably include bakes and fried plantain. My son has requested pig tails, so perhaps I'll do cook up rice. And tomorrow will probably be roast chicken, roast potatoes, macaroni pie and salad. What pot are you turning this weekend?
