What we cooking this week BMN?

Hey folks. After the heat wave last week, I’m a bit lost for ideas. Thankfully it’s cooling down now this week but my brain isn’t ready yet. To top it off, we just moved house and fridge/cupboard is a bit bare.

I pulled out a package of skin on bone chicken thighs from the freezer and I’m about to jerk them overnight :)

I’ll roast them tomorrow evening when it’s cooler but still a bit stumped for other food this week though. This afternoon I made a vegetable couscous salad but Mr. Jings and I plowed through with gusto.

Anyway, what are y’all cooking this week? What are you eating cold as a full meal, etc?

@Maggiethecat I've never cooked anything to a Nigella recipe before!
I guess I've been a bit Nigella -ist.

I need to leave the ripe bananas a few more days then, to be sure. I think one of my problems is I use them before they are ripe enough.

I'll make it for the weekend, as some of the local cricket team come back with my son after the match. They eat everything, and love their cake! Making up for lockdown these last few weeks.

I'm loving this thread!

I'm in bone idle mode I'm afraid. Also low carbing. Today I did a load of peri peri chicken drumsticks, and roasted Mediterranean veg + 2 slices of plantain on the side. I will have leftovers tomorrow.

Mr Cherry is Guyanese so Roti (my downfall 😁) appears every week or so, I can't make it like he does. But I make a good pumpkin or red pea soup with dumplings, that's for weekends.

When it's hot and humid like this I do prefer a light stirfry

I'm loving the beetroot tips on here, going to give it a try as I love beetroot but I'm not inventive with it.

This thread will have me raiding the kitchen in a minute...!

I have a beetroot recipe that I haven't done in years - I'm going to dig it out to share and will do it this weekend.

I replaced walnuts with toasted pumpkin seeds.

Beetroot and goats cheese is also a good combo!

So grateful for this thread @JingsMahBucket - inspired to try a few on here plus dig out some old favourites!

For Thursday and Friday we have homemade beef masala, onion bhaji and garlic naan.
Then for Saturda roast pork chops, spinach, sweet potato mash and gravy!!!

Because of this tread I am in a backing mood. I try to keep it to a minimum because I have to eat it all by myself. But I really want some banana bread now. Grin

@EchoNan Roti is hands down my favourite dish. And It’s even better the next day for brunch.

@DeeCeeCherry I am surinamese so I can imagine exactly what MrCherry roti is like.

I am off to the market today to get some supplies

I made fried up potatoes in tomatoes with caramelised onions.. I didn't have meat to through in. So I use up dds smoked pork salami going to waste. For vegie, i added some aubergine.

Today- pan fried salmon fillets and orzo salad was not too heavy but still quite filling.

@NurseButtercup - haven’t made corn bread in ages. Will try that recipe for the next bbq! Smile

@DeegeeDee how many did you order? I’m trying to reconcile blowing a wad on mangoes and I’m having trouble pulling the trigger.

Hello Ladies! You've given me heart to enjoy cooking again.

I'm still working through the freezer.
Tonight we are having baked rainbow trout with lemon, black pepper and garlic, and asparagus, baked on a tray in the oven.

I've some new potatoes too so will cook them. lovely with butter!

I am using the fact that I want my child to know how good mangoes can be as justification. Cheaper than going home ATM 🙂

I’ve made a huge fried plantain salad with spinach and chickpeas and chillies. Fried chicken to go with.
