Help me choose wedding menu please

I need to pick my choices for my wedding menu tasting and really struggling to decide. We get to pick 2 options for each course and I have ruled some out already but would love to get some feedback. It is a spring wedding (May) in Scotland and our guests are mainly a mix of people in their 30s and older relatives (from both Scotland and Ireland).

Starters:
-Smoked salmon with dill creme fraiche, capers and soda bread
-Scotch egg wrapped in haggis on a bed of leaved with dijon mayo
-Warm venion sausage salad with bacon, tomatoes and balsamic dressing
-Potted smoked mackerel with dill horseradish and seeded bread
-Tomato with bufallo mozzarella and rocket pesto on souordough

Mains:
-Sirloin of beef, potatoes, savoy greens, yorkshire pud and gravy
-Lamb loin with garlic potatoes and roast root veg
-Chicken wrapped in pancetta, dauphinoise potatoes, beans and pesto
-Seabass in a dill and fennel butter, potatoes and asparagus

Pudding:
-Salted caramel brownie with vanilla ice cream
-Cranachan with double cream, oatmeal brittle and honey
-Blueberry and vanilla cheesecake
-Strawberry and passion fruit cheesecake
-Mixed berry eton mess
-Tiramisu cheesecake
-Apple tart tatin with cinnamon butterscotch sauce and creme anglaise
-Pear and rhubarb crumble

As you can see I'm having most trouble narrowing down desserts haha. My partner and I love food and not fussy so would like to go with what would be popular (he does want the roast beef included though which I agree with!). Any vegetarians/vegans will be catered for separately. Thanks :)

I think we have decided:
-Salmon or Scotch egg
-Beef or Chicken
-Cranachan or tart tatin

Will try them at the tasting next week and can always change if dislike any of the options!
@duvetdayforeveryone we do have a few children but there is a separate children's menu
@TheIblisHasspoken thanks that's great advice, you can get so swept up in the whole thing and before you know it, you don't know what you want!

This is possibly the best wedding menu I've ever seen (and I'm vegetarian!). Where are you getting married?

I'm assuming you've got separate veggie/vegan choices for those who are that way inclined, so I'd say:

Smoked salmon
Scotch Egg

Beef
Chicken (some people are weird about lamb, my mother being one of them)

Cranachan
Brownie

Whole thing looks amazing, though - the only thing I would have turned my nose up at in my omni days would have been the sea bass, but's that's only because I don't like the texture.

Venison sausage or smoked mackerel

Beef or Seabass/chicken (Both good looking lighter choices)

Cranachan or tarte tatin.

Ask them if they can serve either the mackerel or the seabass without dill so they aren't so samey.

For our wedding, we went 1 soup starter, 1 other (can’t remember now might’ve been black pudding or haggis type thing, also Scottish), 1 chicken, 1 beef main and for pudding 1 chocolate and one more fruity option so here it’d be like the cranachan or brownie. I went for the crowd pleasers rather than most adventurous. I hate turning up at a wedding and the choices are so obscure there’s nothing to eat or you have to move it around your plate and feel ungrateful and hungry!
