Help me choose wedding menu please

I need to pick my choices for my wedding menu tasting and really struggling to decide. We get to pick 2 options for each course and I have ruled some out already but would love to get some feedback. It is a spring wedding (May) in Scotland and our guests are mainly a mix of people in their 30s and older relatives (from both Scotland and Ireland).

Starters:
-Smoked salmon with dill creme fraiche, capers and soda bread
-Scotch egg wrapped in haggis on a bed of leaved with dijon mayo
-Warm venion sausage salad with bacon, tomatoes and balsamic dressing
-Potted smoked mackerel with dill horseradish and seeded bread
-Tomato with bufallo mozzarella and rocket pesto on souordough

Mains:
-Sirloin of beef, potatoes, savoy greens, yorkshire pud and gravy
-Lamb loin with garlic potatoes and roast root veg
-Chicken wrapped in pancetta, dauphinoise potatoes, beans and pesto
-Seabass in a dill and fennel butter, potatoes and asparagus

Pudding:
-Salted caramel brownie with vanilla ice cream
-Cranachan with double cream, oatmeal brittle and honey
-Blueberry and vanilla cheesecake
-Strawberry and passion fruit cheesecake
-Mixed berry eton mess
-Tiramisu cheesecake
-Apple tart tatin with cinnamon butterscotch sauce and creme anglaise
-Pear and rhubarb crumble

As you can see I'm having most trouble narrowing down desserts haha. My partner and I love food and not fussy so would like to go with what would be popular (he does want the roast beef included though which I agree with!). Any vegetarians/vegans will be catered for separately. Thanks :)

Although personally I like a soup as a starter with a hot buttered crusty roll 😋

The only starter I would eat would be the Tomato and mozzarella. But a lot of people would prob like the salmon too. So

Mozzarella salad or Salmon

For the main, I would personally like the lamb but so many people don't. I know you said you will inc the beef, most people like that, but everyone likes chicken I've been to a wedding where that was the only choice and no one complained. Also I have only meet 1 person in my life who didn't like chicken.

Beef or Chicken

And brownie or eton mess for desert.

Possibly not the most "out there" menu, but ours wasn't either we just wanted to make sure everyone got something they would like.

I'd pick: Starters:

I'd go for one boring option per course, then pick the most Scottish ones for the other option

So starter: haggis scotch egg or tomato/mozzarella salad

main: beef or chicken

pud: cranachan or blueberry/vanilla cheesecake

Favourite starter would be the potted mackerel but:

Smoked salmon with dill creme fraiche, capers and soda bread
-Potted smoked mackerel with dill horseradish and seeded bread

Sea bass would be favourite main but struggled to choose between;

-Sirloin of beef, potatoes, savoy greens, yorkshire pud and gravy
-Chicken wrapped in pancetta, dauphinoise potatoes, beans and pesto
-Seabass in a dill and fennel butter, potatoes and asparagus

Pudding:

Ok tricky but my narrowing it down would be;

-Salted caramel brownie with vanilla ice cream
-Cranachan with double cream, oatmeal brittle and honey
-Tiramisu cheesecake
-Apple tart tatin with cinnamon butterscotch sauce and creme anglaise

This is an amazing thread!
I'm going to start one when it's my time to choose because I have no idea what I'm doing!
I need to choose 3 arrival drinks (can be cocktails)
A number of different canapés (4 or 6, can't remember what we said now)
3 starters
3 mains
3 desserts
I'm totally bamboozled by it!
I'll be back later in the year!

What do you mean 'vegetarian/vegans' will be catered for separately.

Don't they get to see what food they're being offered, and possibly get a choice? What if someone who isn't vegetarian wants the vegetarian option but won't know, because they don't know what it is?

But from your options, I'd pick the smoked salmon every time and lamb for main. Desserts are a tough decision but it would be between
cranachan, eton mess, tarte tartin or crumble.

or
Venison sausage salad with tomatoes etc

Main
Sirloin of beef with vegetables roast potatoes and Yorkshire pudding etc
Fillet of sea bass with potatoes and asparagus

Pudding
Cranachan!!!!
Apple tart tatin

What a lovely menu, it all sounds delicious! I wish I was a guest.
Although the above are what I would choose for myself, I thing a more general middle of the road people pleaser menu would be:
Tomato and mozzarella salad
Chicken wrapped in pancetta with vegetables
Eton mess

I'd definitely choose smoked salmon as a starter...it's always popular.

Then the scotch egg or tomato/mozzarella one

You can't have two fish starters available and the venison sausage sounds delicious but a bit niche

I'd go

Starters Salmon..Sausage and bacon salad.

Main Roast Beef...Chicken

Puddings Salted caramel brownie...Strawberry and Passion fruit cheesecake.

That way there's a mix of nice flavours and a choice of something lighter to eat or a more filling meal.

I'd choose smoked salmon/tomato and mozz
Beef/seabass
Brownie/crumble.

I'd choose tart tatin, but it's too difficult to do well for a large crowd.

I wouldn’t pick any of those starters (sorry!) 🤢 the venison would be the only thing I would find tolerable out of that list.

For the main I’d got with Beef or Lamb and for dessert I’d pick the Brownie and ice cream.
