Help me choose wedding menu please

I need to pick my choices for my wedding menu tasting and really struggling to decide. We get to pick 2 options for each course and I have ruled some out already but would love to get some feedback. It is a spring wedding (May) in Scotland and our guests are mainly a mix of people in their 30s and older relatives (from both Scotland and Ireland).

Starters:
-Smoked salmon with dill creme fraiche, capers and soda bread
-Scotch egg wrapped in haggis on a bed of leaved with dijon mayo
-Warm venion sausage salad with bacon, tomatoes and balsamic dressing
-Potted smoked mackerel with dill horseradish and seeded bread
-Tomato with bufallo mozzarella and rocket pesto on souordough

Mains:
-Sirloin of beef, potatoes, savoy greens, yorkshire pud and gravy
-Lamb loin with garlic potatoes and roast root veg
-Chicken wrapped in pancetta, dauphinoise potatoes, beans and pesto
-Seabass in a dill and fennel butter, potatoes and asparagus

Pudding:
-Salted caramel brownie with vanilla ice cream
-Cranachan with double cream, oatmeal brittle and honey
-Blueberry and vanilla cheesecake
-Strawberry and passion fruit cheesecake
-Mixed berry eton mess
-Tiramisu cheesecake
-Apple tart tatin with cinnamon butterscotch sauce and creme anglaise
-Pear and rhubarb crumble

As you can see I'm having most trouble narrowing down desserts haha. My partner and I love food and not fussy so would like to go with what would be popular (he does want the roast beef included though which I agree with!). Any vegetarians/vegans will be catered for separately. Thanks :)

Scotch egg or tomato and mozzarella
Beef or seabass
Brownie or cranachan

Mackerel sounds lovely, but to many people would turn their nose up at it, so wouldn’t pick it for a wedding

If you want the most popular I would say:

Starters: Tomato mozarrella and the scotch egg
Mains: Beef and chicken
Desserts: Brownie and one of the fruit cheesecakes

Not what I'd personally choose, but they'd be the most popular items.

I'm vegetarian, so my opinions might not count for much!!

If it was me, being brutally honest, I'd choose something my parents would enjoy, (or Grandparents etc.)

Smoked Salmon
Scotch Egg

(Scotch egg is a bit of an odd choice, but I wouldn't have 2 fish, or venison or something vegetarian ( as they're not choosing from this menu)

Beef (as STB DH wants it)
Chicken (most meat eaters will eat it)

Cheesecake (anyone)
Apple tart

Personally I'd live the brownie, but I think the above two will appeal to more of) your guests)

Personally I would go for:

Smoked salmon/Scotch egg - nice to have the Scottish thing run through

Chicken/Seabass - I work in events, and beef can be super-tricky as people like it cooked differently which can be a nightmare en mass, and a lot of people don't really like lamb (it would be my personal favourite)

Cranachan/Apple Tart Tatin - again the Scottish thing, and that tart tatin sounds delicious!

Whatever you do, don't put the veggie/vegan option on the menu you put on the tables, as people always think that's an option for anyone and the kitchen ends up running out!!!

Thank you so much everyone-loving hearing all your suggestions! This is my first post and didn't expect to get so many replies so quickly. I think I'll go for one lighter and heavier option for each course.

Thinking:
-Scotch egg or smoked salmon
-Beef or Seabass (or chicken haha)
-Brownie (never my choice but always seems popular!) or Cranachan (more scottish version of Eton Mess)

We're having about 120 guests and no difference price wise what we pick. Vegetarians/vegans will be catered for separately (likely another decision I have to make haha the struggles )
Would love to hear more people's thoughts :)

Oooh, this is fun. I agree with @User237845, the option of a lighter and a heavier option for each course is a good principle. And I'll keep the beef as requested:

Starters: Smoked salmon/Tomato on sourdough (I would prefer the mackerel, but I think most people would prefer the salmon which also sounds fab)

Mains: Beef/Sea Bass

Pudding: Eton mess/Tarte tatin

I'd go for these - definitely cranachan as I love it(am a Scot ) but would avoid haggis as although I like it, some really don't. Same with scotch eggs and venison.

Avoid the sea bass and chicken - you need something that doesn't dry out on hot plates and while being sent out, and something slightly fatty is better.

I'd avoid haggis and venison as this might be too niche for some peoples taste

I'd avoid
Tiramisu, a lot of people dont like coffees, or alcohol in deserts
Crumble - bit ordinary, not really a celebration pudding
Tarte tatin, only because I make a really good one that's really caramelized all the way through and it really annoys me when I eat out and I have them, they're often poor quality, apple with caramel sauce

That menu sounds amazing, I’m in Scotland can I come??

I only don’t like smoked salmon (but I’d just eat the sourdough lol) or Tiramisu as don’t like alcohol in desserts, my other half doesn’t drink so wouldn’t take that either.

My choices would be the haggis wrapped scotch egg or potted mackerel starter, then beef or chicken main, and desserts Eton mess or the Brownie. Problem is everyone on this thread will have a different choice!

As you can choose two, I think the choices should be different. So..

Salmon and venison sausage as starters.
Beef and chicken (possibly sea bass) as main.
Brownie and cranachan or mixed berry Eton mess (so chocolate and fruit)

Sounds good. I'd choose chicken over seabass
