New year new ideas please!

Ours had got to the stage of something like this...:

  1. burger and chips
  2. pork loin steaks veg and potatoes
  3. sausage, mash, peas and gravy
  4. curry and rice
  5. pizza and chips
  6. take away or eat out
  7. roast

I need to mix it up, eat less meat and more veg.

Would you mind sharing what an average week of dinners may look like to you?

Love these threads for inspiration. I don't rotate meals, obviously some meals I cook more often than others but there's always a good few weeks between repeating something as we get bored but I do find it tedious trying to think of things each week! We've done quite a few boxes in the past so going through their old recipes sometimes helps. I do want to try and make healthier meals this yeaR but as I find the planning a chore by that point I just try to think of easy things to get it done!

This week it's:
Beef ragu with olive & tomato salad (hello Fresh recipe)
Pork steaks, peppercorn sauce, veg, mash
Chicken & leek pie
Rice & veg - all leftover veg mixed through rice with sauce of choice
Spanish chicken- smoky chicken, peppers, pastas bravas (gusto recipe)
Nando's fries & halloumi & chicken pittas
Eat out/takeaway once a week

I love these food threads! We’re a pescetarian household, next week is shaping up like:
  1. Burnt aubergine chilli (veggie)
  2. Jamie’s 5-ingredient fish curry
  3. Jacket spuds, beans and salad
  4. Sea bass with salsa verde and roast potatoes / some kind of fish traybake
  5. Kimchi fried rice with lots of veg and a fried egg
  6. Fish tacos, usually with pickled veg in / on the side
  7. Usually get a takeaway once a week!

If you want easy swaps could you turn the burgers into homemade bean burgers (these are really good sallysbakingaddiction.com/best-black-bean-burgers/) and add some veggie sides to the curry?

Today tofu ‘satay’ stir fry (cashew rather than peanut)

Tuesday brazillian black bean stew and rainbow salad, so leaves, roast squash, salsa etc

Wednesday tagliatelle (not sure how to spell that) with broad beans, asparagus, sweetheart cabbage and a dressing/sauce made with dairy free creme fresh, garlic and lemon.

Thursday baingan

Friday harissa roasted cauliflower and salad

Saturday lobia daal

Sunday sour thai soup

That's very carb heavy Too

Caesar salad
Seabass and roasted veg
Spag bol
Chicken fajitas

Morrican tagine (basically a load of veg add some dried apricots and harrisa seasoning bunged in the slow cooker , meat free)

quiche with salad

Chicken stir fry

We’re both veggie and eat without the kids on weekdays, so it’s usually something like:

  1. Anna Jones’ Kale Spaghetti
  2. Pad Thai with tofu & noodles
  3. Stuffed pasta & pesto
  4. Roast squash with veggie chorizo
  5. Tex Mex lasagne (with ricotta & black beans)
  6. Tacos (squash, guacamole, feta)
  7. Meatless Farm spag bol

Fried rice topped with fried eggs and hoi sin sauce.

Ramen bowls with boiled eggs.

Macaroni cheese.

Slow cooked ribs with corn on the cob.

Salmon, veg and potatoes.

Home made sushi - first time trying this one!

Today we’re hungover so we’ll get some takeaway tonight; probably have a bacon & brie baguette for lunch

Tomorrow we’ve got a Spanish chicken and potatoes thing from Charlie Bigham

Wednesday I’m making a pasta salad to have cold with feta, chicken, pesto, black olives- I’m going out so dh can forage around for a snack in the evening

Thursday we’re going out for dinner before the theatre

Friday I’m making cod with Parmesan crust and lemony new potatoes with cherry tomatoes

Saturday, I’m out with friends so dh will order something

Sunday we’ll probably get another Deliveroo or something

Next week we’re going back to gousto boxes

Mon: Jackets with beans/chees/tuna Mayo and salad
Tues: Veggi spaghetti Bolognese
Weds: Yellow pea soup with sausages and fresh bread
Thursday: Veggi ‘beef’ strips stir fry
Fri: Fish, potatoes, broccoli and carrots
Sat: Pizza and salad
Sun: Roast chicken, pots, med veg, cauliflower

Love this thread and I love cooking so will definitely be trying some of these ideas!

In winter ours tends to be something like
1)Roast of some description. Beef/chicken/Gammon
2)Leftover meal-Pea and Ham soup/chicken pasta/beef/chips and leftover homemade beef gravy as I always make loads and everyone really likes it! Sometimes I make little beef pies instead
3) Bolognaise/Meatballs/Cottage Pie/Chilli. Apart from the meatballs I bulk out with pearl barley, grated carrot and other veg and freeze a portion
4)Homemade soup-tomato/celery/carrot and coriander/mushroom
5)Risotto, usually with chicken but I love mushroom or pea risotto too
6)Pasta dish, Tuna Pasta bake/carbonara/ravioli/veg pasta bake
7) Jacket Potatoes/Poached Eggs/Sausage casserole/Corned Beef Hash/Stirfry/Toad in the hole/homemade sausage rolls

Obviously serve with veg and that just depends on what I have in really.

Once a month, I will swap out one meal for something as a treat, like Burgers/steak/pizza. We might have a takeaway once every couple of months as an extra special treat. I am a big fan of bulk cooking so always have a little stock of things made ready, after Christmas the freezer is quite full so over the next few weeks we have some pies, soups and curries to swap in to the usual menu. I am trying to keep food costs down as I have noticed food is creeping up when I do the shop.

We have veg with the sausage and mash too.

We also sometimes have fish pie, lasagne, spaghetti Bolognese, chicken fajitas or enchiladas

Vegan here...

  1. Green bean, tofu and butternut squash Thai green curry with coconut milk.
  2. Five bean chili with rice.
  3. Linda McCartney sausages, sweet potato mash, peas and gravy.
  4. Vegetables stir fry with cashew nuts.
  5. Black bean and sweet potato burger with salad and slaw.
  6. Curried chickpea and sweetcorn soup with flat bread.
  7. Roast dinner... broccoli, sweetcorn, green beans, cauliflower, carrots, parsnips, peas, potatoes, sage & onion stuffing and loads of gravy.

This week we have:

  1. Tomato and goats cheese risotto
  2. Mushroom stroganoff
  3. Pork fillet tenderloin in a creamy sauce with rice and French beans
  4. Beef tacos with sides
  5. Sausages, baked potato, beans and cabbage
  6. Curry
  7. Chili con carne using the leftover mince from the tacos

Monday quorn nuggets, slimming world chips and veg (ease for ds going back to school tomorrow)
Tuesday quorn steak mini roast dinner
Wednesday pasta salad
Thursday most likely pitta pizzas
Friday vivera burgers
Saturday chickpea curry
Sunday veggie roast

I'm doing slimming world and we have a 6 and 1 year old. The one year old will join in with all this but the 6 year old is very fussy and will pick at it all.

Mines a mix of things like:

  • Chickpea and mushroom curry & rice.
  • Black bean and mixed peppers fajitas.
  • Plant based burger with bun & chips/salad.
  • Spaghetti bolognaise / cottage pie with quorn mince (or another plant based mince).
  • Takeaway - tofu with green pepper & blackbean sauce (Chinese) .. and from Indian I'll have vegetable Bhuna with vegetable rice.

Thanks for the beanburger recipe, that looks good, lots of variations in the comments on that site too. I've not had success with homemade bean burgers yet.
