New year new ideas please!

Ours had got to the stage of something like this...:

  1. burger and chips
  2. pork loin steaks veg and potatoes
  3. sausage, mash, peas and gravy
  4. curry and rice
  5. pizza and chips
  6. take away or eat out
  7. roast

I need to mix it up, eat less meat and more veg.

Would you mind sharing what an average week of dinners may look like to you?

I'm liking the inspiration here. We should have a roast more often, and also use the slow cooker.

There are two of us, and due to DH's irregular shift pattern and other commitments, we normally eat together 4 nights a week. This can include:

Smoked salmon omelette
Pasta with puttanesca/ busk it as we go sauce
Traybake - normally chicken or sausages with butternut, peppers, onions, courgettes, kale etc
Spanish tortilla with potato, onions, peppers, olives
Stoverij beef cooked in beer
Fishcake, jacket, big salad
Provencale fish stew

When I'm eating alone, I like a big stir fry or Pad Thai, or a Massaman curry. My fave stir fry at the moment is turkey mince with 2 types of cabbage, celery, onion and tamari. Topped with wasabi mayo.

I have my themes up thread (pasta something one night etc). can now narrow it down for this week;

Mon- (pasta) tuna pasta with sweetcorn and chilli (using a passata sauce, not a creamy sauce).
Tues- (tacos or fajitas) -fajitas with beef strips, red peppers and lettuce
Wed- (rice ) - bably fried rice with vegetables and an egg
Thursday- (hotdogs or sausages)- Lidl bratwurst with german hot potato and onion salad
Friday (soup) - Italian meatball and pasta soup (basically minestrone with meatballs. A favourite).
Saturday - (roast) - roast chicken
Sunday (supper) - eggs and soldiers.

So, I've just shopped for this week -

Red pepper & sweet potato soup with rolls
Biryani (will have veg sticks before it as a "starter")
Roast chicken & potatoes & veg á la PP in one pan
Hot chicken & salad wraps / baguettes
Bangers & mash with greens
Amatriciana

Our menu for the next week will be something like this (meat twice a week, fish twice, veggie dish the other days)

Breaded Fish with French fries and mushy peas
Chicken teriyaki stir fry with noodles
Vegetable curry with naan bread
Salmon, new potatoes and some veg
Grilled Halloumi with flatbread, hummus, salad, red cabbage, olives etc.
Chicken fajitas
Spinach and feta filo pie with salad

Corned beef hash topped with poached egg
Lasagna, garlic bread and salad
Pork chops, fennel and sweet potato

Main evening meals for us are:
Chicken in creamy mushroom sauce and veg or chicken and cauliflower and broccoli in a cheese sauce
Chicken, cheese, bacon and sweet corn pasta bake with salad and garlic bread
Steak and chips and salad
Roast dinner
Bangers and mash and peas
Any meat or fish with roasted Mediterranean veg and rice
Soy chicken with stir fry veg and noodles
Takeaway once a week

7 of us in our house, 3 dieting and 4 not

  1. roast chicken, roast potatoes, lots of veg
  2. pasta bake with garlic bread and broccoli 3)jacket potatoes with cheese, beans and salad
  3. bacon and brie risotto with salad
  4. Pil will come for tea and mil will cook
  5. cous cous with garlic, onions, peppers, corguettes and sandstorm
  6. cottage pie with whatever veg is left over at the end of the week

W-pork loin steaks with sauce, veg and wedges
T- roasted veg lasagne
F- smoked salmon and pinenut pasta with watercress and cucumber salad
S - chicken enchiladas with salad and red wine
S - roast dinner
M- breaded chicken, chips and peas from freezer
T - fish chips and beans from freezer.

This is a typical menu. Monday and Tuesday freezer days are pretty much set in stone because of work hours and people coming and going..it works even though it is crap. Try to have take away only once a month. Really want to eat more than one veggie meal a week but struggle with inspiration.

I do 5 Mindful Chef meals each week.

This week it’s:

Mon: Chicken in black garlic and tomato sauce with polenta (MC)
Tuesday: Duck and Italian white bean stew (MC)
Wed: Italian-style cod (MC)
Thursday: baked Camembert, crudités, salad, baguette
Fri: Chicken Shawarma with fennel and slaw (MC)
Saturday: Sesame-glazed steak with broccoli and rice (MC)
Sunday: pizza and salad

  7. something processed like meat free sausages chips and beans or pizza

Chop egg mushrooms and beans
Tues
Pasta carbaranna sauce crispy bacon on top. Grated cheese and salad on side.
Pre cooked and frozen to defrost on my work days
Wednesday / Thursday/ Fri
Meatballs have with pasta
Spaghetti bolansise or with mash and vegs
Curry, rice nan bread
Sometimes do
Chicken bake in oven with veg and potatoes in or have any take away on Friday.
Sat
Salmon, new potatoes and salad
Sun
Chicken, spicy bulgur wheat and salad.

This week;
Tonight: sausage and mash
Tomorrow: barbecue pork loin steaks with stir fry noodles and veg
Wednesday: lasagne
Thursday: salmon, prawns new potatoes and veg with hollandaise sauce
Friday: Greek slow roasted leg of lamb, roasted veg, feta and couscous
Saturday: Vietnamese pork belly with fried rice
Sunday: roast beef with all the trimmings

We're pretty meat heavy as DW can't do without it.
I try to mix potatoes, rice, pasta and noodles across the week.
I also cook for an elderly relative and try to make things interesting for them / give leftovers for re-heating on the nights I cannot cook for them.
I love cooking and would like to try new things all the time but do get stuck in a rut sometimes!
We don't go out much and spend quite a bit on food shopping instead of other treats..

Tomorrow is four cheese pasta bake using up some of Xmas cheese plus salad.

Wed- meatballs, rice, green beans

Thursday - chicken wrapped in Parma ham, jackets, salad maybe?

No idea for this evening, I was going to do pasta and use up pigs in blankets chopped into a sauce. We had the pigs in blankets for a snack after sorting the garden.

Monday - pork chops with mustard, rainbow potatoes, steamed broccoli
Tuesday - chicken stir fry
Wednesday - spaghetti bolognese
Thursday - steaks with garlic spinach and new potatoes
Friday - bourbon marinated chicken breast, baked potatoes, glazed carrots
Saturday - we go out
Sunday - either a roast or a curry

Risotto topped with garlic prawns,
Vegetable and black bean fajitas with soured cream, guacamole and salsa.
Aubergine parmigiana with garlic bread.
Gnocchi dolcalette crema.
Steak, salad and bearnaise sauce.
