To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

I pick the rest of the meat off when it's gone cold, chop it into bite sized pieces, add some veg, add some gravy, put pastry on top (bought, not necessarily homemade) and ta-dah....it's a chicken and vegetable pie.

Just buy chicken breasts and cook those. Wrapped in pancetta is best.

You’re a family of 4 and there’s roast chicken left to throw away?! So you eat half a breast each for a roast dinner? Just buy two chicken breasts in the future.

I make pasta salad for lunch with the leftover meat. Pasta, pesto or mayonnaise, tin of sweet corn and whatever salad veg you have (I use a pepper, some cucumber and a tin of sweet corn). Pull off bits of chicken and stir in. Makes a change from sandwiches. Or stir it into hot pesto pasta?

We are the same. I only like the breast as well. We do get off quite a bit for our dog so that’s good but we do waste a lot too.

Chicken fried rice - make mixed veg fried rice and add shredded cooked chicken at the end.

After your roast, strip the carcass - you will get loads of meat from the thighs, legs and underneath.

Put the carcass in a pot with a roughly chopped carrot, an onion, celery, some black peppercorns and a bay leaf if you’ve got one. Boil it up for stock.

Next day use the stock and the leftover chicken in any of these:

Risotto (all types!)
Soup (noodle broth is nice)
Chicken pie filling (we like sweetcorn & white sauce, maybe bacon too & ready made pastry)
Sweet & sour chicken/chicken in black bean sauce
Curry
Pasta bake

If you insist on wasting perfectly good chicken then why not just buy the breasts if that's the only bit you eat?

You shouldn't throw away something that could feed your family for another 4 days...

Curry, noodle soup, coronation chicken and paella is what we use ours for.

There are so many things! We always have sandwiches but also use it in pasta, risotto, curries, stir fries, pies, tacos, enchiladas. BBC Good Food has lots of good ideas - there's a children, squash and pesto lasagne that I make often.

That is an awful thing to do. I’m thinking of the bird that was slaughtered and you are too lazy to even try to use as much of it as you possibly can. You should be ashamed.

Have a look at how chickens are raised and slaughtered. Hopefully you will then realise that throwing away half a chicken each week is not only wasteful but unethical too and change your ways.

The other night I took all of the rest of the meat off, chopped it/pulled it apart so it was in thin strips, dipped it in beaten egg and then seasoned flour and dropped it into hot oil for maybe 3/4 mins. It was addictive, I had it in a wrap with fresh tomato and corn salsa and lime rice and the kids had it with sweet corn and rice. Not the healthiest way to cook chicken, but it was a winner.
