To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

@nimbuscloud I completely agree. God this has upset me. Imagine the torturous life the chicken led cos you can bet this wasn't a free range chicken being chucked out half uneaten.

Whatever about waste, but unless you're a vegetarian it's a bit daft being righteous about the fact the animal was slaughtered so therefore you must consume every inch of it. I don't think the chicken cares how much of it's carcass gets used up. It's no less disrespectful to eat all of it. Slaughter is slaughter.
No, I disagree. If you are going to eat meat then let it be good quality and make use of as much as it as you can. I haven’t managed full nose-to-tail (I draw the line at brains, for example) but I try.

Or - fry an onion. Add a tin of tomatoes. Stir in some roasted peppers, or olives. Add the leftover chicken and cook for 20 mins. Nice on pasta or rice.

I'm also agog at 1 chicken breast for 4 people. I've got a 7 year old and 9 year old and tonight we cooked 3 chicken breasts in this maggi wraps and we ate one each.

There's actually five of us but I'm vegetarian.
Sunday was a roast dinner, roast potatoes, Yorkshire puddings, carrots, swede, cauliflower, broccoli, peas, stuffing.
Fajitas had loads of veg added.
The curry and stew were packed out with root veg and lentils.
To be fair, there wasn't a lot of actual chicken in the stew but they all enjoyed it.

We strip it, shred it and add it freshly cooked pasta for a lunch for the children who at home as school is closed.

Tuesday we stripped the rest of the meat and they had chicken and veg curry. Wednesday I boiled the carcass and used the stock and remaining scrappy bits of meat in a stew.

We had roast chicken the other night. I took all the meat off, then boiled the carcass.

I made chicken noodle soup with the stock from the carcass, using the meat left over. It was delicious.

I always make stock from the carcass.

I do have a cat and a dog so they do have a little of what's left some weeks.
I would choose to cook something different but 2 are fussy eaters and dont like any other roasted meat.

I love the smell of chicken stock wafting through the house. Takes no effort either and you're left with a jug of lovely chickeny elixir.

Cold meat is a no go, I'm not keen on it cold and nobody else would eat it cold either unfortunately so cant be used for pack ups etc 🙄
You never have ham or chicken sandwiches?

Honestly you sound like you have food issues.

You're taking a life every week and binning half if it.

Then just buy a crown, or stop repeating the same madness every week and buy 2 skin-on chicken breasts and have done with it.

I do love a MN a magic chicken thread. My kids would’ve left home had we have shared a chicken breast between the 4 of us. They ate more than that when they were toddlers.

I usually use the leftovers for sandwiches in the week for DH because I’m not keen on it when it’s cold. If DS1 is here they fight over it.

That is very wasteful, leftover chicken is so easy to use. We just pull all the meat off after we’ve eaten our roast and use it for:
Stir fries
Chicken pie
Fajitas
Chicken mayo sandwiches
Chicken curry
Chicken stew
Chicken pasta

Anything with chicken in. You don’t have to use the thighs and legs whole if you can’t be bothered to butcher them properly, it’s easier to use up the meat if you just rip all it off the bone after your roast as then it’s all chunks rather than having some random legs and thighs to use up.

curry, fajitas, quesadillas, chicken sandwiches, chicken salad, casseroles etc. Lots you can do.
I cook a whole chicken most weeks to portion out and have on hand for lunches.
If you don't fancy using it for anything else just buy a smaller chicken than what you do then you won't waste.
