To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

Roast dinner.

I couldn’t eat the whole leg in the end so I put the thigh back.

Yes of course, they have massive plates full of cauliflower cheese and roast potatoes and stuffing and Yorkie puddings. I think the meat is just filler and they have what they want. Nobody really wants loads of meat when they can have all the sides instead...

If people fill up on potatoes, obviously half a breast is fine portion for them then.
I have to say that i am gobsmacked at some of the portions here. If i was served half a medium chicken breast as a teenager, I would end up eating my parents.

We had a 4lb chicken and a supreme between 6 yesterday.
We also had pigs in blankets, stuffing, roast potatoes, carrot, swede and potato mash, leeks in cream, broccoli and cabbage.
I carved up the breasts and cut off the legs which DS1 and 2 eat and there is enough left for one packed sandwich or two slightly stingy ones today. I've made stock for soup which has a few stringy bits of chicken in I genuinely can't see how we'd get any other meals from it though.

In my defence, we buy just about all our meat in M&S (stock up when on offer and I have a £5 off when you spend £40 voucher, so it's not expensive)

Please - you don't have to justify your outrageous profligacy to us . . . .

This is such an incredible waste of food.
There are so many easy recipes - chicken enchilladas, curry, fajitas, stew, coronation chicken, chicken pie, chicken egg fried rice, chicken and chorizo paella - how many do you want? Just google left over chicken recipes

DH had Quesadillas - 1 filled with chicken & peppers in fajita spices & cheese, the other with re-fried red kidney beans & cheese. Plus a salad.

Thanks! 🙂 it does take a bit of planning but it’s well worth doing - you can get so much good food out of leftovers. And you save money too!

i made a dish that my super fussy 12 year old loves. It's a bit grim sounding, but is tasty - cook diced onions, carrots, celery. Add chciken meat. Por over a tin of cream of mushroom soup and serve over rice.

This is even better if you cook the rice and then put the whole lot in the oven together for 1/2 hr with the soup on top. A staple of my childhood!
It was my sister's favourite and she still has it on her birthday every year.

DH’s chicken sandwich - chicken, stuffing and sprouts mixed together with some of the leftover gravy.

I’m having my chicken lunch plain as I like just eating the chicken with extra salt. Yum!

Dinner no.4! Chicken and bacon soup with carrots, leeks, mushrooms and spinach. DH had fusilli in his to bulk it out, and some Parmesan, but I prefer mine without.

That concludes the story of this MN chicken. And not a single bit was wasted.👍👍

OP,
One tip re the stock, boil it hard for a good half an hour, then take a potato masher and bash the hell out of it, and then boil it up again and let it sit for 30 minutes.
I burn a candle in the kitchen as I am not mad about the smell!

This gives you all the goodness from the bones and is why stock is so nourishing, especially for your chest.

I do a pot with a couple of chickens every week and make a soup with spinach, potatoes, carrots and a couple of tins of butter beans.
I whizz it up till smooth.
It is delicious and I think it is the reason I raised 4 children that have never needed an antibiotic in their lives...maybe I am wrong but I think a good stock is a hugely nourishing food and I have sworn by it for the last 30 years.

The best way to get all the goodness from the bones is to do slow and low ime.
Bring to boil, then low simmer. On a cooker i used to do 6-8 hours. In slow cooker 20.
Chicken bones end up crumbling if you squeeze them. It's amazing and yes, very nourishing.

I use my pressure cooker.
Handiest pot I own!

Mine comes out as a dense jelly and the fat hardens and can be scraped off.
