Today I have decided to go vegetarian, I've been thinking about it for a while also my DH wants to try as well which is great! I won't force it upon the kids 3 and 6 but they will eat the same evening meal as us.

Am looking for some inspiration so far for this week we have

Tonight ....Roasted peppers stuffed with med veg cous cous and topped with mozzarella cheese kids won't eat that so they will have cheesy pasta.

Sunday
No meat roast dinner am never fussed on the meat anyway so will do stuffing,Yorkshire puds, roasties, cabbage, carrots, brocolli, gravy will throw some sausages on for the kids or chicken breasts.

Monday
Mixed chilli bean and cheese quesdillas with smashed avocado and salad

Tuesday
Mushroom and spinach risotto with garlic bread and salad

Wednesday
Mixed med veg in a tomato sauce with roasted cubed sweet potatoes and corn on the cob

Thursday
Leftover veggies/fridge bits omelettes (we have pet chickens so this is a regular in our house)

Now am stuck on some other meatless meals.....

Ooh I am following this with interest as went pescatarian a while ago, and also have young kids and am really running out of ideas now beyond pasta, pasta and yet more pasta.

Lentil and chickpea stew is gorgeous. Can go in slow cooker for a few hours or done in a pot.

Hello veggie family here, I'll add some in a bit but just to say for your Sunday Roasts, add a Sainburys nut cutlet (in frozen dept), or Holland and Barrett nut roast to it, so much better than just veggies on their own.

Veggie lasagne is a fave here, make it humongous so you can eat it for a few meals.
Make with veggie mince (Quorn or store own brand) or courgettes or aubergine instead of mince.

Serve with new potatoes or baked beans or chips.

I do chickpea and spinach curry
Noodles, avocado and black beans as a quick fav of dd
Lentil and butter bean stew with other veg
Otherwise there are some good meat substitutes you can use in standard meals like lasagne, cottage pie, etc etc. Doesn't have to be quorn, can be soya based or other plant based sources. Some are really lovely and there's a lot more variety than there used to be. The main thing I find about being veggie is being aware of varying your protein sources, cheese, lentils, beans, tofu being the main ones apart from meat substitutes.

We get Hello Fresh veggie recipes now and again and the ones we like we recreate. It's been an excellent way of expanding our meal choices.

Bean chilli is a good one

In a pot fry a chopped onion with paprika, cumin and coriander, add 2 celery, 2 carrots, cook, then add a tin of chopped tomatoes. Cook.
Add a Tin red kidney beans drained and a tin of normal baked beans drained. Chop some fresh chillies and stir in.

Serve with rice or baked potato.

I make pasta sauce that can be the layers in lasagna or the tomato sauce for spaghetti.
Fry chopped onion, add chopped veggies, carrots, celery, courgette, peppers. Fry until softish, add garlic, red wine, stock, tinned tomato and tomato purée. It’s ragout.

Veggie soups, add Pearl barley or if you add red pepper and mini pasta it’s minestrone. Add dumplings on top and oven bake and it’s veggie cobbler.

Veggie shepherds pie. Fry onion, add a pouch of black lentils and chopped mushrooms, stock, red wine, tomato purée and reduce to a decent gravy. For shepherds pie add a spoon of mint sauce, for cottage pie add Worcester sauce. Top with mash as per usual.

Richmond veggie sausage are amongst the better veggie sausages, great for veggie toad in hole.

Tinned jackfruit is a good base for a homemade veg curry. The jackfruit is good as a meat substitute if you don’t want loads of veggies. Chickpea and cauliflower curry is another winner.

Jacket potatoes, beans on toast and omelette are easy and quick.

I make that hellofresh veggie paella meal a lot, the ingredients are very cheap and it’s all in one pan, plus you don’t even need to stir for the last 15 minutes or so, so the kitchen is all sorted aside from 2 plates and a pan :)

I would be careful or the amount of carbs in your meal as well as the amount of cheese. So easy to put o w eight!

You are so fortunate to have chickens! I would try to incorporate eggs in as much as possible, frittata, egg curry, veg burgers with egg salad, omelettes with soup, pickled eggs as appetisers or sides.
Also lots of yogurt, and other fermented foods to help digest those beans/lentils that invariably occupy a large chunk of a veg diet!

I’m vegetarian and have meals which consist of a few small dishes, very simply prepared - protein (could be sautéed tofu, eggs, lentils) greens (small salad, sautéed spinach) one other seasonal veg (eg roasted/steamed cauliflower or carrots or anything seasonal), something fermented (yogurt, pickled something) and a carb (rice, bread, noodles)

Tonight we are having vegetable fajitas with peppers, red onion and baby corn - homemade guacamole and salsa as it happens but we do shop bought quite often too

Tomorrow will be leek and camembert filo parcels with roast spuds and veg

Other meals for the week will be Mary Berry's lentil cottage pie and one night well have falafel wraps with chips and salad.

Tesco website has a recipe for meat free sausage casserole - I'm not a huge fan of meat replacements generally but love cauldron sausages in this.
