Today I have decided to go vegetarian, I've been thinking about it for a while also my DH wants to try as well which is great! I won't force it upon the kids 3 and 6 but they will eat the same evening meal as us.

Am looking for some inspiration so far for this week we have

Tonight ....Roasted peppers stuffed with med veg cous cous and topped with mozzarella cheese kids won't eat that so they will have cheesy pasta.

Sunday
No meat roast dinner am never fussed on the meat anyway so will do stuffing,Yorkshire puds, roasties, cabbage, carrots, brocolli, gravy will throw some sausages on for the kids or chicken breasts.

Monday
Mixed chilli bean and cheese quesdillas with smashed avocado and salad

Tuesday
Mushroom and spinach risotto with garlic bread and salad

Wednesday
Mixed med veg in a tomato sauce with roasted cubed sweet potatoes and corn on the cob

Thursday
Leftover veggies/fridge bits omelettes (we have pet chickens so this is a regular in our house)

Now am stuck on some other meatless meals.....

I'd recommend you buy any of Anna Jones books. The Modern Cooks year has got some awesome recipes in.

She also does a column in the Guardian

My favourite (and I'm not veggie) is a whole warm grilled chevre blanc goats cheese, plonked in the middle of a plate with rocket and chopped cherry tomatoes around it. Big dollop of onion chutney on top of the cheese, with crusty bread on the side.

"Chicken" piece quorn and kidney bean enchiladas are quick and fuss free, kids won't notice lack of meat - I use a kit eg Aldi and add quorn, peppers, onions, and red kidney beans to the enchilada sauce. Serve with guacamole, salad and tortilla chips

I love Asian & Mexican food, lots of tofu, chilli, & pulses etc. Halloumi in tacos is not remotely traditional but it's really good. Had a Hello Fresh recipe I think that is refried beans, little gem lettuce, chipotle mayonnaise (blend chipotle paste or tinned chipotle chillis, or whatever you can get, with mayo) with grilled halloumi in flour tortillas. Surprisingly good.

We often make:

  • quorn mince lasagne
  • spaghetti & meatballs (Waitrose have the best frozen vegan meatballs: £2 a bag)
  • veggie fajitas or tacos
  • sweet potato and lentil dahl/curry
  • tofu stirfry
  • spicy buffalo cauliflower 'wings'
  • bean and cheese baked potatoes when we're hungry and short of time

This is so easy and is my go to on really busy days.

Tub of couscous (I use Taste the Difference Moroccan with spices and sultanas in) from the olives / hummus aisle, or use plain packet couscous and make it with a vegetable stock cube in the water. Top with pan fried halloumi slices. Serve with mixed roasted Mediterranean veg (frozen, ready to roast or make your own with peppers etc).

We're not veggie by any means but try and have 4 out of 7 meat free.
On those days the meals do sometimes contain an ingredient that's not veggie but I'm sure could be omitted or substituted eg Worcester sauce. Won't eat meat substitutes - don't like to eat anything that's been that processed.
Go to meals are
Egg fried rice
Cashew noodle stir fry
Cauliflower/ broccoli pasta bake
Mushroom strongonoff but substitute white wine for red - amazing
Veg lasagna
BBC good food burnt aubergine chilli is absolute favourite, a bit a a faff to make but freezes really well so good to batch cook

We had this for dinner tonight with jacket potatoes. I made a big batch a month ago. This really is the king of veggie chillis.

Not veggie but try not to eat too much meat. One of the DCs favourites is the good old mushroom burger. I destalk a portobello mushroom per person, chop the stalk and mash it with some goats cheese. Fill the mushroom with the cheese mix and bake for 20 minutes. Serve in a burger bun with lettuce tomato and caramelized onion chutney and a side of wedges.

Spinach, feta and mushroom curry (I'm not veggie so I add prawns to this)
Goan tomato, potato and cashew curry
Tofu (chicken for me) with homemade satay sauce and either sesame roasties or stirfried noodles and veg
Shakshuka (eggs poached in spicy tomato sauce)
Sausage casserole (Cauldron's Lincolnshire sausages only!)
Flatbread and salad with Tesco's meat free 'doner kebab' meat
Falafels, hummus and flatbread with salad
Spicy potato with onion chutney toasties
