Today I have decided to go vegetarian, I've been thinking about it for a while also my DH wants to try as well which is great! I won't force it upon the kids 3 and 6 but they will eat the same evening meal as us.

Am looking for some inspiration so far for this week we have

Tonight ....Roasted peppers stuffed with med veg cous cous and topped with mozzarella cheese kids won't eat that so they will have cheesy pasta.

Sunday
No meat roast dinner am never fussed on the meat anyway so will do stuffing,Yorkshire puds, roasties, cabbage, carrots, brocolli, gravy will throw some sausages on for the kids or chicken breasts.

Monday
Mixed chilli bean and cheese quesdillas with smashed avocado and salad

Tuesday
Mushroom and spinach risotto with garlic bread and salad

Wednesday
Mixed med veg in a tomato sauce with roasted cubed sweet potatoes and corn on the cob

Thursday
Leftover veggies/fridge bits omelettes (we have pet chickens so this is a regular in our house)

Now am stuck on some other meatless meals.....

We've tried quorn in lasagna but it lacks enough structure not to go horribly mushy. Makes a good spag bol though (not as good as beef but good enough to consider tasty).

It’s the other way round here the kids have gone veggie and I can’t be bothered to cook 2 evening meals. My favourite at the moment is curry, I got the veggie guy curry recipie book (some are online). They are yummy and don’t need meat. Also the vegetarian butcher range has some good soya chicken and shamawarma. I try and have a protein replacement every meal eg cheese, soya, quorn , beans, lentils because they are growing children. Having said that leek risotto is good!

@foxhat I found a lentil based tomato sauce much better than quorn in lasagne.

Lentil lasagne. I make as normal but use tinned green lentils instead of mince and add a finely chopped red pepper.
Savoury crepes. Fry a sliced red onion and sliced mushrooms with garlic until the onion is soft. Add sweet corn and creme fraiche and a sprinkle of brown sugar. Heat through. Spoon onto crepes (or tortilla wraps if you cba making crepes), wrap and eat with a green salad.
Marie Rose pasta salad - cook and cool pasta. Add to a bowl with diced red onion, celery, grated carrot, chopped apple, sliced grapes, chopped tomatoes, diced cucumber (basically whatever floats your boat!). Stir in a dollop of ketchup and a squeeze of lemon juice. Add mayo until it tastes right. We sometimes add tuna or prawns, although I know you're not asking for pescatarian recipes!

  • slow roasted fennel and olive pasta

Agree with pp that you need to make sure you have some protein in every meal - a plate of veg isn’t nutritionally balanced.

Think about what foods you can eat, don’t focus on taking things off your plate.

I’m a confirmed meat-eater and this recipe is absolutely delicious. Plus, it’s pretty cheap!

Op - you need more protein in your veggie meals. Beans, lentils, tofu, egg. If you don't, you'll probably end up hungry and unsatisfied.

We're not veggie but my fave hello fresh recipes are the veggie ones. In particular the chickpea/feta/spinach/harissa pie and the bean quesadillas are both mega 🤤

Mushroom and spinach bolognese which can then go in a lasagna or with spaghetti.

Fritters of various kinds - courgette and lime fritters, sweet potato and leek fritters.

Broccoli and cheddar cheese burgers

Gnocchi Puttanesca (this has anchovies in but you could leave them out)

Gnocchi with mushroom and blue cheese

Cheesy cauliflower soup with parmesan

Watch the carbs... this is my second attempt at going vegetarian. The first time I ended up really quite overweight in a surprisingly short space of time by filling up too much on pasta and potatoes! It's going better this time and I've lost weight.
I found low-carb recipes for diabetics helpful - there are various cookbooks out there with a lot of good ideas in them.

I do a paneer and spinach korma. I add either chickpeas or lentils to bulk it out.

Cheese has been added to some try it meals I did so I'm eating g a lot more cheese than I normally would but am normally quite cautious about having too much carbs. We had a mushroom spinach and brie toasties for tea the other day now normally would quite easily do chips and salad but just done salad instead of double carbing it with chips.

The stuffed peppers I have just made were absolutely amazing and so easy. Served with salad so cheese for protein veggies in salad and carbs in cous cous so hopefully seems balanced enough.

I second (third?) using lentils instead of mince. Great source of protein and the texture works well.
My preferred lentils are puy. A little more expensive but worth the money.
I've been veggie for years and I would say the mistake most non veggie people make is making a meal and subbing the meat. Actual veggie meals are much tastier and more satisfying.

I think it depends a bit. Easy mid week curries/chillis type things I think are absolutely fine with chickpeas/lentils/paneer/tofu/roasted veg as a substitute. I agree that just reaching for quorn etc is rarely as good. I used many more meat substitutes just after going veggie. I think you get more used to what to cook instead of meat the longer you’re at it!

Tesco’s ‘Chunky Minestrone Soup with Gnocchi’ is lovely. ( recipe online). It’s quick and packed with veggies. A little high in salt but delicious and fairly cheap too.

My tip is experiment with pulses as much as possible, otherwise you’re going to get hungry quicker.

I use the vac pacs of lentils a lot and tinned chickpeas and butter beans. So for example I might roast a load of veg (courgette, aubergine, sweet potato, butternut, etc) once nearly roasted stir in pasata or tin Tom’s and pulses. Roast for five minutes. You could also crack eggs into the top to poach them or put cheese on top.

Try jackfruit in fajitas, it has the texture of pulled pork, really nice.

We also had sticky cauliflower bites with rice and broccoli last night

Aubergine lasagne. Slice and bake 2 large aubergines on oven tray. Make a cheese sauce. In a pan cook a tin of chopped tomatoes and add plenty of Italian herbs, squirt of garlic puree and tomato puree. In fish layer tomato, aubergines, mozarella slices, lasagne, cheese sauce. Repeat. Top with grated breadcrumbs and grated parmesan. It is filling but you could serve with garlic bread.

Tomato and Lentil Soup.
Chop an onion finely, add to soup maker and cook for 3 mins. Add a tin of chopped tomatoes and in a pan cook 2 large handfuls of red lentils. Strain off froth from lentils. When cook strain lentils in a drive and run through with boiling water. Add lentils to soup maker. Add a drop of single cream. Top up water to 1 litre. Cook for 15 mins. Blend. Serve with crusty french stick and a swirl of single cream.

Quorn Mince Shepherd's Pie
Cook Quorn in a saucepan. Strain off any liquid. Crumble in a vegetable stock cube, squirt of tomato puree and spoon of onion gravy granules, simmer together with a drop of boiling water for 10 mins. Peel and cook potatoes. Mash with butter and add to top of pie. Serve with carrots and peas. Make a jug of onion gravy to pour over.

Cheesy Pasta Bake
Make cheese sauce with whole milk, flour, cheddar, parmesan and teaspoon of mustard powder. Cook fusilli and strain. Mix fuselli into cheese sauce and stir in well. Pour into oven proof dish add a layer of breadcrumbs mixed with grated parmesan. Serve with oven cooked red, orange and yellow coloured peppers drizzled with olive oil and sprinkled with Italian herbs. Cook both in oven for about 25 mins.

Vegetable Stir Fry with black bean sauce. Chop up in long strips peppers, courgettes, carrots, an onion, mushrooms and bamboo shoots. Throw into wok and keep stirring, add black bean sauce. Add vegetarian bacon strips about 3 mins from end. Serve.

Veggie Toad in the Hole.
Cook packet of Linda McCartney sausages. Slice long ways. Make Yorkshire pudding mixture. Heat up 2 tablespoons of veg oil in a fish in hot oven. When very hot add cooked sausages and pour over batter mixture and put in hot oven on high shelf for 30 mins. Cut into slices and serve with baked beans.

Quorn Bolognese
Cook Quorn mince with a chopped onion. Strain off any fluid. Add veg stock cube. Add 2 tins of chopped tomatoes, chopped peppers, chopped mushrooms, 1/4 tube tomato puree, bit of Passatta for liquid, squirt of garlic puree, Italian herbs and simmer for 25ins. Cook and strain spagetti then pour over Bolognese sauce add fresh basil to top, grate on parmesan. Serve with garlic bread.
